Notes: add grains to 3.7 gall of 144F water temp 125F for 30 minutes
use HERMS to up mash to 155 F HLT @ 155
using the strainer and hose on MT outlet on top of grains.
mash ph. with 5.6..
sparge water ph. 6 added 1 teaspoon citric acid volume is 4.8 gallons. at 155 F added 2 liter water
collect 7 gal sg 1052 add 2 liter water SG 10.046
boil Perle 60 minutes Saaz and Spalt for 10 minutes with one Whirlfloc tablet.
Only going to boil down to 7 gals and chill into primary,
Whirlpool the fermenter before transfer off of cold break.
Let trub settle and transfer again to primary, add 2 packs of yeast in 4 days on Aug. 5 transfer to secondary off of the basement floor @ 68 F SG 1.012

Notes: June 2020 tasting notes:
Significant improvement in all areas: flavor, mouthfeel, hops balance -- this is a fantastic beer! Will brew this again in July or early August as it's crisp and refreshing in the summer heat. No more tinkering with the recipe, just focusing on controlling mash temp. Cheers!
June 2020 recipe revisions:
Adjust pH with lactic acid; reduce Cl to SO4 ratio to 1:1.
Add 1 lb grain: reduce wheat grist ratio; sub some pilsner malt.
Adjust hops additions for low to mid 30s IBU.
Increase yeast pitch rate: 150 g recycled refrigerated Kveik slurry
May 2020 tasting notes:
Recycled kveik "experiment" successful: 25 grams frozen kveik "cake" produced active fermentation within 3 hours!
Citrus and Hops flavors shine and wheat maltiness is nice complement. Overall tastes a little thin and soft; could use a bit more yeasty crispness/dryness.
"Original" profile (May 2020):
Recycled Voss kveik (OYL-061) that was harvested from a batch of NEIPA. Reconstituted Kveik yeast: 25 grams of frozen/dried slurry.

Notes: Add 500mg potassium metabisulphite to 20 gallons water to remove chlorine/chloramine (as required).
Water treated with brewing salts to: Ca=50, Mg=10, Na=16, Cl=70, S04=70 (see our Water Adjustment guide for complete details)
(Hit minimums on Ca and Mg, keep Na very low, and keep the Cl and SO4 values low and balanced).
Use 1.5 quarts of water per pound of grain for mash thickness.
Mash at 149F for 90 minutes (single infusion mash).
Raise mash to 168F (mash-out).
Rinse grain slowly for 60-90 minutes collecting 14.9 gallons (fly sparge).
Boil for 90 minutes adding hops and clarifier per schedule. Final volume is 12 gallons.
Chill to 68F. Aerate well. Add yeast.
