Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gal recipe you will need extra because of the fluid loss during the boil process
1lb Caramel Vienne 20 Grain
1lb Rahr 2 Row Grain
.5lbs Carapils Grain
.5lbs Carahell Grain
6bs Gold LME
2oz Mosaic Hops
3oz Simcoe Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME, and return wort to boil
Add 1oz Simcoe hops and boil for 60 minutes
Add 1oz Simcoe hops and 1oz Mosaic hops and boil for 15 minutes
Add 1oz Simcoe hops and 1oz Mosaic hops and boil for 5 minutes
Remove pot and enough bottled water to bring the specific gravity to 1.055
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4 - 5 days
Reduce CO2 to 5 - 7psi, pour and enjoy

Notes: 1. Add hops to 3 gallons cold water
2. Steep grains until 175˚
3. Remove grains, add 1 jar LME
4. Bring to boil, boil for 30 minutes
5 after 30 mintues, cut heat, stir in remaining LME and DME and 1 oz cryo
6. Chill to 110˚, top off with 3 gallons cold water
7 put in fermenter and pitch

Mashed with 12.75 gallons, used finest grind setting, and squeezed the bag. Still ended up about a gallon short of the target 10g, or possibly a little more than a gallon. Efficiency was at 75% but 68% when accounting for volume issues. Next time I plan to double crush, squeeze the bags, and pour one gallon of water over the bags (or dunk bags into one gallon of water) in an attempt to increase both volume and efficiency. |
