Notes: This is not my recipe. I am planning to brew without the addition of the apple juice concentrate however I will be adding yeast nutrient to support fermentation.
Ingredients:
1 gallon Indian Summer apple juice (SG 1.050)
10 oz Langer's frozen apple juice concentrate
1 can (29 oz) Libby's pumpkin puree (NOT pie filling, no added sugar)
US-05 ale yeast
1 campden tablet at 2nd racking time
4 whole cloves
1/2 tsp 'apple pie spice'
1/8 C vodka
1/2 tsp sorbate for stabilizing at the end
3/4 C white sugar for backsweetening
Method: I brewed with the pumpkin pulp in the must. I mixed the first 4 ingredients in a plastic brew bucket with lid/airlock, and pitched the dry yeast straight on top of the must. It fermented until about SG 1.010 in ten days. By this point the pumpkin puree had settled to the bottom. Then I racked to secondary, glass growler. (You should probably top up with fresh apple juice here, although I did not.) Be careful not to upset the pumpkin sludge.
At this point, I added the spices, suspended in vodka, to the secondary. After 4 days, I racked a second time to get rid of the remaining spice/pumpkin sludge. That seemed to be enough time to get the spice flavors. I racked onto 1 campden tablet.
I let it sit in secondary for 3 weeks, and then racked onto 3/4 C sugar and 1/2 tsp sorbate to halt the fermentation and backsweeten. I put the growler in the fridge for good measure, and I will bottle when it clears a bit. It already tastes fantastic though, just the right amount of spice & pumpkin. |

Notes: Dry hops should be added within 24 hours of fermentation starting. Hop selection should be based on fruit, and kept to a minimum (certainly less than 4oz total). The fruit is the real star of the show here, not hops.
Use a similar to NEIPA water profile but back off the total amounts, especially on the chloride (< 100)
Yeast can be any clean yeast - we may try 1272 in the future but for now, S05 is the safe bet and at least some haze should stick around despite it not being a "New England" yeast
FRUIT - One pound + per gallon. If using a combination of fruits then you can total up to that amount - up to 1.5-2 lb/gallon seems to work ok from research
TIP NOTES: Ok. Made this for dad's 60th. ALWAYS...sterilize your fruit. People online say you don't need to. You do. This beer got a brett infection from some frozen mango we added from trader joes and tasted like sour bandaids. ALWAYS ALWAYS ALWAYS either use aseptic fruit or sanitize it before adding. The base cream ale is a GREAT recipe for a fruit beer (or a dry hopped clean ale for that matter), but really adding hops is a waste of money. Let the fruit shine through, and make sure you sanitize or use the vintner's harvest. This was secondary in the Poland spring also...next time plan is to try secondary in a keg and move it around like the dry hop. MAIN LESSON IS TO ALWAYS SANITIZE FRUIT! This recipe features 2 extract additions: The first addition will be at the beginning of the boil, and the second will be at flame-out (the end of the boilwhen the heat source is turned off).
1. Add 2.5 gallons of water to your 5-gallon brew kettle. This is known as your strike water.
2. Pour the specialty grains to your large muslin bag, and gently place them into the strike water. This is now called the mash.
3. Begin heating the mash to around 170ºF/76ºC. After you have
reached your target temperature, turn off the heat and let the grains steep for another 10-15 minutes. Remove the bag, allowing it to drain any excess into the kettle, and then dispose.
