Notes: Smoke the Pilsen Malts
To smoke your own malt at home, you should first moisten the malt with chlorine-free water and then smoke it over a cool fire. Your malt should be a light malt, appropriate for use as a base malt in your beer. The lighter the malt, the more the smoke flavor will be apparent.
Prepare your smoker or outdoor grill for indirect heat. The fire should be for “cold smoking”, as heat can adversely affect the malt flavors, so you want to keep the temperature as cool as possible while still generating smoke. Aim for about 120° Fahrenheit.
Make sure you have no glowing coals or flames, as flames will scorch your grain instead of smoking it. If you keep your grain in a fine mesh bag, you can also help prevent ashes from getting into the grain, as well.
Keep the grain moistened periodically throughout the smoking process, but never make it really wet. A spray bottle of non-chlorinated water is your friend here. Whenever you open the smoker to add wood or change out the water pan, you should also spray the grain some, as well. This will help the smoke adhere to the grain.
I recommend smoking the grain for about four hours at 120° Fahrenheit. This temperature can be hard to maintain on a conventional grill, and will be easier if you have an actual smoker. I use a smoker that is powered by propane, which gives me excellent control of the temperature inside. |

Notes: Three Gobblers Copper Ale

In the spring of 2015, Michael, his son, and his brother were hunting locally for turkeys. To their great surprise, they all three ended up taking home a nice gobbler that day. This great event had to be memorialized. How better than to create a new, tasty home brew? The following is Michael's delicious result.
Special Note from Recipe Winner Michael Mann
This beer is a delicious melding of flavors. The sweetness of the 2 row is balanced beautifully with the sharpness of the Cascade hops and the slight bitterness of the roasted barley. The aromatic adds a bit more maltiness to the mix while subtle coffee and chocolate notes are added by the roasted barley. The color is a beautiful, brilliant copper. After months of tweaking this recipe I got to this point and I love it. I'm sure everyone else will too.
Ingredients:
9 lbs. Pale 2-row Malt
1 lb Aromatic Malt
3 oz. Roasted Unmalted Barley
1 oz. Columbus Hop Pellets
1 oz. Cascade Hop Pellets
Energizer / Irish Moss Combo
1 Packet Safale US-05 Dry Yeast
Instructions:
Grind all malts
Mash in 12 quarts of water @ 150 degrees for 60 minutes
Sparge with 5 gallons of water @175 degrees
Bring wort to boil and add 1 oz. Columbus hops
After 40 to 45 minutes add Energizer / Irish Moss Combo
Boil for a total of 60 minutes
Add 1 oz. Cascade hops for last 3 minutes of boil
Chill to 65 degrees and pitch yeast
Ferment as follows for best results if possible:
65 degrees for three days
slowly raise temperature to 68 degrees over next 5 days
raise temperature one degree per day to 72 degrees(14days)
Keg or Bottle after 14 days in fermenter
Enjoy after 2 to 3 weeks |

Notes: This brew is designed for summer brewing and drinking. Yeast is harvested from previous brew and is forgiving in warmer ambient temps. With no proper cooling facilities this suits my set-up well.
Also, this combination of maltiness and a touch of citrus from the hops will compliment the fruity esters. Should be interesting.
Same intention of pitching anywhere between 18-22c and then bumping up the temp steadily (after krausen has died down) all the way to 30c for the last 4 days or so. Previous brew seemed a resounding success with this.
Will employ a step mash recommended for Saison by Joe Strange at beerandbrewing.com. Mash in 45c and gradually raise to 72c over 90 mins. 45c 50c 60c and 72c 20 mins each. Why not? |
