Notes: Warm 10 liters to 75°C
Mash at 65°C for 60 minutes or until conversion is complete.
Add half of the water salt additions to the mash and the rest at sparge. Sparge with 11,7 liters
Add the First Wort hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool at 90°C for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 19°C for 2–3 days, then allow the temperature to rise slowly to 23°C by the end of fermentation to ensure full attenuation.
When fermentation reaches 1.020–1.022 gravity, add the first dry-hop addition.
About 4 days later rack and add the second dry-hop addition for another 4 days.
Package at 2.6 volumes of CO2. |

Notes: Brewed Jan 19th. Fermented at 49F for first four days -- vigorous fermentation was pushing beer out of airlock. Blow off tube applied. Activity slowed after fourth day. Allowed to free rise until 58F at day 6. Minimal additional airlock/blow off activity during that time.
Gravity reading taken Jan 24th -- 1.012 with signs of obvious fermentation (krausen). Bright yellow and opaque with yeast. No diacetyl noted during gravity reading but ++ sulfur present. Gravity sample tastes of deep bready malt. Very nice flavour.
Gravity reading taken Jan 29th -- 1.008 Beer has yeast rafts floating on top but beer is much clearer and no more signs of fermentation. No off flavours noted on sample. Strong aroma from the Spalt hop addition with a clean malt that ends dry. |
