2. Hold at 104 F 15 min + add Munich extract

- Pull 25% grains (about 4 quarts w/ wort) and boil for 15 min
4. Add back to wort until 140 F and hold 10 min
- Pull 25% grains and boil 15 min
5. Add back to wort until 155 F and hold 10 min
- Pull 25% grains and boil 15 min
6. Add back to wort until 162 F and hold 10 min
7. Pull mash and sparge at 172 F
8. BOIL: 75 min + boil schedule
9. Collect ~4.5 gallons of wort and check OG to see if water is needed
10. Fermentation
- Pitch yeast at 65 F
- 14 days at 54 F
- 2-3 days at 66-70 F
- Move to secondary
- Slowly lower to 35 F
- Lager for 3-4 weeks or more
11. Warm to 65 F for bottling
12. Boil 3 oz honey and 2 oz priming sugar in 1.2 cups of water
13. Take FG and add sugar to bottling bucket

Notes: This recipe made me a braggot lover. No carbonation, though I am sure it would work.
Add Fermaid O at 0, 2 and 4 days during primary, Last addition is only necessary if FG> 1.03. This is drinkable almost immediately after first racking.
Alterations from original recipe: reduced honey to 5#, increased crystal malt from 10 oz to 16 oz, added 1 oz hops (@15 min).
Saaz is great for this. I have no idea why hops/IBUs aren't part of braggots in this recipe builder but low AA hops like Saaz (my favorite) work well to counter the residual sweetness. Works fine w/o hops as well. |

Notes: The 3l test ferment went pretty well so I'm going all in and scaling up the cider to a full 13l batch in my proper fermentor.
I'm just letting it ferment in my garage without all the usual temp control and monitoring this time and I'll see what happens.
Not sure how to enter in all the juices that I chucked in the fermentor into the recipe so check the photo for what juice I used.
WLP644 - I wanted to use it up, not sure how it will go but hopefully some nice tropical flavours
Nelson Hops - I thought that the "white wine" flavours might go well with a cider
Bourbon Oak Cubes - I've heard good things about "barrel aged" ciders
It will probably end up quite dry so I'll probably back sweeten with something. I'll see. |
