Notes: 1) add 1 gallon of spring water to sanitized carboy with 5lb of wildflower honey
2) Pitch 6.66g of K1-V1116 in 250 ml of 104º water with 12.5g of Go-Ferm PE, allow to cool to within 10º of must temp before pitching (aprx 45 mintues)
SG should be near 1.125
3) 24 hours post-pitch DEGAS before adding 2.5g Fermaid O
4) 48 hours post-pitch DEGAS before adding 2.5g fermaid O & take SG reading, if it's cleared 1.080, add 5lb of honey & 1 liter of water, if it has not hit 1/3 sugar break, delay honey addition 24 hours
SG should again be near 1.125 after honey & water addition
5) 72 hours post-pitch DEGAS before 3g Fermaid K mixed with 5g of DAP
6) 96 hours post-pitch DEGAS before 3g Fermaid K mixed with 5g of DAP
7) 120 hours post-pitch take SG reading, if it's cleared 1.080, add 2lb of honey & 1 liter of water, if it has not hit 1/3 sugar break, delay honey addition 24 hours
SG should be near 1.104 after adding the 2lb of honey & 1L water
8) The long haul:
at this point your 3 gallon carboy should be at capacity, continue to take SG readings every 48 hours until you hit your desired finishing sweetness & then stabilize
9) stabilization: Bottle the mead & add the bottles to 150ºF water for 30 minutes, then cool & rest

| Notes: Frozen Serbian raspberries were added with 1kg of DME with about 3.5 litres of hot water whisking hard to dissolve all ingredients and juices. Water up to recipe volume was added and brought up to boil. After cooling down and reaching 40c, 1dl of probiotic juice containing Lactobacillus Plantarum were added. Lacto fermentation in kettle kept going on for 48 hours until taste were at desired level (ph 3.4). Contents of the kettle were strained, and later pasteurized at 75c for about 15 minutes. After cooling down, yeast was added in fermentor. Priming with table sugar. Taste was juicy, foam was pink. |

| Notes: Bring crystal malt to 155 degrees and sparge,. Add malt extract and hops , .Ginger. 1/2 the coriander and boil. for the indicated times (Citra hops added at last 10' w/ I Moss & Servomyeces. At end of boil wort chiller cool to 100 degrees and add the homey. Half the crushed coriander and nutmeg are placed in the primary. Add yeast started . 5 gallon cooled batch read at 1.097 O.G. w/ Refractometer. |

Notes: Boil Rhubarb in 5 l water
Mix 6 l cold water -2 Kg sugar - Cest from lemons and Sliced Lemons.
When Rhubarbs are soft mix in on big container
Put in sun with Lid on container for 3 days - stir once a day with ca clean spoon
On Day 3 Add 2kg sugar and 2 milliliter yeast (dry Bread yeast)
Stir once a day
On day 6 - Pour in bottles about 75% full. Don’t put on cap
On Day 8 Put on cap - Store dark for 14 days (LOOK OUT FOR BOTTLE BOMBS)
