Notes: This is an all-grain recipe designed for advanced homebrewers. If your mash tun is not large enough to hold all 21 pounds of grain, you can substitute light dry malt extract for a portion of the 2-row malt. Use a ratio of 0.65 pounds of dry extract for each pound of malt removed. The malt extract should be added after the sparge as the wort is heating to a boil.
I recommend a minimum of 3 weeks in secondary fermentation before bottling or kegging to allow the flavors to meld and the harsher alcohol flavors to subside. If you're not in a hurry, 6 weeks of aging seems to be about perfect time.
2 to 3 Liter starter Dry English Ale yeast, either White Labs WLP007 or Wyeast 1098
Directions
1. Mash-in the 21 pounds of grain to 154°F using 5.75 gallons of water at about 167°F (1.1 quarts of water per pound). Stir for 2 minutes to prevent balls of grain from clumping together, creating a consistent mash.
2. Cover the mash, only uncovering to briefly stir every 20 minutes. Heat 4.25 gallons of sparge water to about 185°F.
3. After mashing for 60 minutes, mash-out and sparge. You should have 7 to 7.5 gallons in the kettle. Add 2 ounces of Magnum hops and bring to boil.
4. After boiling for 60 minutes, add 1 ounce Northern Brewer hops.
5. After a total of 80 minutes, add 1 ounce Northern Brewer hops.
6. After 90 minutes remove from heat and chill using a wort chiller to 60°F. Transfer to a carboy and take a gravity reading.
7. Ferment at 60° to 65°F for 3 weeks. Transfer to a secondary carboy and age in a cool dark place for another 3 to 6 weeks.
8. Bottle or keg for a medium low level of carbonation.

Step by Step
Mash grains at 152 °F (67 °C) for 90 minutes. Boil wort for 75 minutes adding hops per scheduled times and spices with 5 minutes left in boil. Cool wort to room temperature and drain or rack the wort off of the trub. Aerate the cool wort with as much air or pure oxygen as possible. Ferment at 75 °F (24 °C) for 3 weeks in the primary and 3 weeks in the secondary. |

Step by Step
Steep the crushed grain in 2 gallons (7.6 L) of water as it warms until a temperature of about 170 °F (77 °C) is reached, or approximately 20 minutes. Remove the grains from the wort and rinse with 4 quarts (3.7 L) of hot water. Add the liquid to reach a total of 3 gallons (11.3 L) in the brew pot and bring the wort to a boil. Turn off the heat, add the liquid malt extract, and stir until completely dissolved. Return to heat and add the Nugget hops. With 15 minutes remaining in the boil, add the dried malt extract and yeast nutrients. Add the Simcoe® hop addition with five minutes remaining in the boil. After turning off the heat, add the Amarillo® hops and then rapidly chill the wort to room temperature. Transfer to a fermenter and top off to 5.5 gallons (21 L).
Pitch the yeast when the temperature of the wort is about 68 °F (20 °C). Preferably pitch the yeast as a 1.5-L starter if pitching liquid yeast. Hold the wort at this temperature for the duration of primary fermentation. Fermentation should take 10–14 days. Following fermentation, dry hop for 5 days before bottling or transferring to keg. Prime to 2.4 volumes of CO2.
Tips for success:
This recipe is designed to be simple and easy. The dry hop is up to the brewer’s preference. I originally used Amarillo® when first developing this recipe, but I have switched it up to Citra® to brighten the aroma. Whatever American aroma hops you prefer would be appropriate here. |

Notes: 1. Add 3 gallons of water to kettle and turn stove on.
2. Add 3 gallons of water to sterilized fermenter.
3. Add dry malts and steep for thirty minutes. Ensure the temperature does not exceed 170 degrees.
4. After thirty minutes, remove dry malt bag. Then add the two tubs of LME while stirring.
5. Bring wort to a boil. Boil for fifteen minutes.
6. Add 0.5 oz citra hops. Set timer for thirty minutes.
7. Once thirty minute timer sounds, add 1.5 oz citra hops. Set timer for fifteen minutes.
8. Once fifteen minute timer sounds, add 0.5 oz citra hops. Set time for fifteen minutes.
9. Once fifteen minute timer sounds, chill the wort to 70 degrees. Ensure every piece of equipment is sanitized at this time.
10. Add wort to fermenter. Aerate the wort. The more oxygen the better.
11. Take the OG with sanitized equipment. OG was recorded at 1.044!
12. Pitch the yeast. Wait fifteen minutes then stir.
13. Place sanitized lid and airlock on fermenter. Brewing process complete.
14. OG after 2.5 weeks = 1.100.
15. Split the batch in half. One-half added 1 ounce CryoHops LupuLN2 Amarillo Alpha 14.4% hops. Second-half placed in secondary and added 2.5 tablespoons passionfruit extract in 2 ounces boiled-and-chilled water. |
