Didn't have cranberry juice in database, so second apple juice in recipe is actually cranberry (cranberry juice has less sugar than apple juice, so gravity will probably be a bit less than shown, but close enough). Used 1.5 gal Gravenstein Apple juice and 1 quart cranberry juice. Mix bot and wine tannin together. Rehydrate yeast with GoFerm, then pitch. Add 1/2 yeast nutrients after 24 hrs, and other 1/2 after 48 hrs (de-gas must before adding to avoid foaming). After fermented dry, rack and stabilize with KMeta and K Sorbate. After a day or so, mix in apple juice concentrate to back-sweeten and keg (or bottle and keep cold in fridge to prevent any chance of refermentation). Could also age on cranberries for a while if you feel it needs more cranberry flavor.
