This is using grain father's mash efficiency calculator. Would be 80% on brewer's friend. - Mash temp settled right it at ~149F - Hit 12.0 plato pre boil gravity which converts to 1.048 vs. 1.044 target so 90% mash efficiency (87.6% on brewer's friend) vs. 83% expected. - Expecting to boil down to 6.0 gallons (after wort cools) so boil-off tool estimates 1.048 OG (now 1.053 with higher mash efficiency), Actual original gravity reading was 13.0 plato which converts to 1.053 vs 1.048 expected - After boil had ~6.21 gallons [23.5 liters] (expected 6.0 not expanded, 6.26 expanded) in the kettle and ~5.75 gallons made it into the fermenter. - Pitched yeast starter and set fermentation chamber at 61F, then slowly started ramping up on day 5 (Thursday night, Saturday brewday). - Packaged on 9/5/20, batch #46, FG was 1.008 (at 69F) which converts to 1.009 so 80% attenuation vs 75% avg. and 76% expected - Fill keg to 51.82 pounds = (1.009FG x 8.345 x 5 gallons) + 9.72 (empty keg weight + packaging hoses attached). Easily got 51.82 pounds. - Turned out stronger than style. So calling this one a Kolsch Bock.

Rehydrate and pitch yeast. Ferment at 66° F (19° F), then warm it up at the end for a diacetyl rest. Dry hop with the pellets for 3 days, then cold crash before kegging. The whole leaf Mosaic hops go in the keg in a mesh bag for as long as the keg lasts (it won’t last long). Tip: before racking to the keg, add the whole leaf hops, then pump up to 15 PSI with CO2, then vent, repeating several times to remove as much O2 as possible before racking.
