Ambient/Outside temp: 103 F
Strike Temp: 162 F
Mash Temp: 151-158 F (60 min)
-We should have shot for a lower strike temp considering how hot it is today. The mash temp landed at 156 F but later when I went to check on it it had climbed to 158 F. I left the lid cracked in hopes to drop the temp a few degrees. 1 hour timer started.
-152 F reached at 42 minutes left. Wort rested a majority of time at 151 F.

1st Runnings - Approx. 4 gal
Batch sparge - 180 F (10 min)
- Collected over 4 gal. Boil kettle is filled to the top. Boil over inevitable.
- Definitely had boil over. Waited for it to finish before adding hops.
2 oz Centennial added at 60 min
1oz Mandarina-Bavaria added at 45 min
1oz Saaz added at 30 min
Wort cooled and honey added at 110 F.

Notes: Based on the Black is Beautiful recipe.
Had to change it up a bit to fit what I have onhand. swapped out the oats for flaked barley and reduced the overall flaked to just 2 pounds rather than 2.75 pounds to fit my mash tun.
Also changed the hops to just a charge of Magnum.
Will likely use Voss Kveik (ABV 12%) yeast or Nottingham (ABV 14%). Either way, it will be fermented at a low temp.
Did a 2 Liter starter 3 days before pitching and decanted the excess wort.
Steep the Chocolate and Black barley rather than mash due to MT size constraints. |

Ever since we retired our Demons of Ale series, we’ve got more requests for the homebrew recipes than almost anything! At first, we were hesitant to modify our recipes to a 5-gallon scale simply because we're not sure if it would replicate well; a 14–18% ABV beer is rough on a homebrew system. However, with so many experienced and dedicated homebrewers asking, we decided to give it a shot! Let us know how it goes!
OG: 1.134
AE: 1.020
Grist: 69% 2-Row Pale, 10% Special B, 9% Roasted Barley, 7% Black, 5% Aromatic
Hops:
-Bravo @ 14.5 AA: 2.5 oz. Boil for 60 minutes
-Bravo @ 14.5 AA: 1.5 oz. Boil for 30 minutes
-Sterling @ 6.2 AA: 1.5 oz. Boil for 0 minutes (flame out)
Yeast: Wyeast 3787 Belgian Trappist Ale
Brewer Notes: The most likely place for this brew to fail is during fermentation. Overpitch yeast, add yeast nutrient like Superfood or Yeastex, control fermentation temp and remove from yeast as soon as fermentation is finished. Start fermentation at 19°C and then turn up to 25°C @ 1.074 SG (usually about 48 hours into fermentation). You will probably not hit 1.020 AE so do not worry if fermentation stops as high as 1.032. Yes, you did read the OG correctly. I’d suggest maxing out your mash tun with grain and sparge as little as possible. If you aren’t able to get that much sugar out of the mash you may boil for longer and/or add a 50/50 mix of DME and Dextrose Corn Sugar to the boil to hit your OG target. Disclaimer: This is a very difficult and expensive beer to brew at home. |

Raised temp to 70° ambient temp.
Has been attenuating for 5 days and has slowed but not by a lot. Still counting roughly 60 bubbles/min in airlock was 120 for 2 days. Very steady.
If attinuation is 75% my abv will be 10.4% might be as high as 11.5% at best. Cheers
After 6 days of fermentation it seemed to have calmed down extremely so i took a gravity reading and was blown away to find the reading was 1.016 or an ABV of 11.26%!! Putting it in secondary tomorrow to settle out and kegging one week later. Should age well i hope. Tastes good already with some trub in it. |
