Ingredients:
7.0 lb (3.18 kg) Pilsner malt (63.6%)
4.0 lb (1.81 kg) Vienna malt (36.4%)
1.0 oz (28 g) Hallertau pellets, 4.8% a.a. (FWH, 90 min)
0.5 oz (14 g) Spalter pellets, 4.5% a.a. (10 min)
Bavarian or Munich lager yeast (2 L starter)
RO water treated with 1g/gallon calcium chloride

Directions:
Mash in for a protein rest at 122° F (50° C) for 20 minutes. Pull your first decoction of about 9 quarts (9 L) and boil for 15 minutes. Add back to main mash and equalize at 150° F (66° C). Hold at that temperature for 60 minutes. Apply heat or boiling water to mash out at 168°F (76° C) for 10 minutes. Sparge, boil 90 minutes, and add hops at stated intervals. Chill and oxygenate when wort temperature falls below 80° F (27° C). Pitch a strong starter of yeast at 48° F (9° C). Fermentation temperature may be allowed to rise to 50° F (10° C). As fermentation slows, bring to 55° F (13° C) and hold three days for a diacetyl rest. When the gravity reaches 1.012 (3° P), crash to lager temperatures (35° F or 2° C) and lager the beer for two or three months (or until Oktoberfest).

for this we're going for green bullet new zealand hopped pilsner although we're using 2row (happened to get a bag on the cheap from an online sale)
i meant to get some crystal malt for this but forgot so instead im mashing high at 158 to get some malty grainey body and flavor.
going to then add the DME to pot (inside?) and add the hops to that.
Need to add more mash noted frim paper but I boiled 1is gallons with the dme and did the hop schedule. I think it might be too caramelised and brown but well see. To sace having to use strainer I just spared the mash grains with the small boiled wort. All in all I came out right st 5 gallons and 1.055 #nailedit |

Notes: Drop a 1L 1.040 starter on yeast cake from small beer 24hrs before fermentation
Mill the grains and follow these steps for a decoction mash: Mash pH 5.3
Mash in at 144°F (62°C) and hold 20 minutes; raise the temperature to 149°F (65°C) and hold 20 minutes; raise the temperature to 162°F (72°C) and hold 20 minutes; remove one-third of the mash and boil it for 15 minutes (or remove two-thirds and boil the remaining one-third, depending on what works best for your system); return the boiled portion to the main mash, which should bring the temperature to about 171°F (77°C).
Vorlauf until runnings are clear, then run off into kettle. Sparge the grains and top up as necessary to obtain 6.8 gallons (25.7 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, following the hops schedule. After the boil, chill the wort to 46°F (8°C), aerate, and pitch the yeast. Ferment at 50°F (10°C). When the gravity has dropped to about 1.018 (4.5°P), increase the temperature to 54°F (12°C). When beer has fermented completely, decrease the temperature by about 4°F (2°C) per day until you reach 39°F (4°C). Hold there for 4 days, then decrease the temperature to 32°F (0°C) and lager for at least 3 weeks—preferably longer.

Use German malt varieties, or this beer will not taste right. Our supplier is IREKS, based in Kulmbach, Bavaria. Our house yeast is from Klosterbrauerei Andechs in Bavaria (and WLP835 may be from the same source). We pitch 22–24 million cells per milliliter. |
