Notes: Sort of a hybrid between a Belgian Strong Golden Ale, a Brut IPA and a British Pale Barley Wine-Style Ale.
Step mash by pulling 1 or 2 decoctions for ultimate fermentability and some added toastiness. Sugar gets added at the end of the boil, stirred into maybe half a liter of some reserved second runnings, probably use Zucarmex or Florida Crystals unrefined sugar.
Non-flocculent London yeast should attenuate nicely.
Package in champagne bottles at Belgian levels of carbonation.

Put nibs in brew bag and into boil for ~3 minutes to sanitize, then into fermenter awaiting the wort.
Mash was at 154.4-152.4, a tad bit higher that target but...
Hit 1.103 OG after 120 minute boil (because we collected 8 gallons and needed it to fit into the SS Brewtech Brew Bucket. |

Notes: Update 7/22/2019 :
I'm changing the yeast attenuation on this because I just measured the FG as being pretty much 1.002. Need to re-evaluate procedures. Possibly overpitching yeast (NO) or mashing too long / not mashing out properly, plus should start adding some crystal malt in there. On the other hand, if so desired - the beer is probably closer to 9% so it would be nice to hit the correct abv but the beer is good, thin bodied, but not as dry as i would expect given what i just found out. perhaps for dipa and tripa this is fine. for my stouts though not so much.
Update 6/10/19 :
rebrewing the "I got nothing" grain yeast and all, this time using one pound of columbus hops for the brew. will do 4 oz regular dry hop and put the other 4oz suspended in the keg.

I accidentally added the wheat to another beer. Thewheat planned for this didnt make it in. Boosting up the corn sugar to 1lb to make up some abv.
update 2/12/19:
changing this for sort of a west coast double ipa spin off. the first beer was pretty good, good hop flavor and bitterness, good everyday beer. this one would be more of a west coast style hop bomb. also going for clear beer (both in appearance and body) this time so axed the oats and london yeast in leui of corn sugar and american ale yeast (may use american ale ii since i have some). will need to cold crash properly as well. also thinking of a different spin off of this in NEIPA style, should be elsewhere in the archives....

kinda made up on brew night.
C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |
