| Notes: Mill the grains and mash at 154°F (68°C) for 60 minutes. Vorlauf until runnings are clear, then run off into the kettle with first-wort hops. Sparge and top up as necessary to obtain about 6.5 gallons (25 liters)—or more, depending on your evaporation rate. Boil for 60 minutes, adding hops at flameout. Whirlpool for 15 minutes, then rest 10 minutes. Chill to 66°F (19°C), aerate well, and pitch plenty of healthy yeast. Ferment at 68°F (20°C) for 2–3 weeks or until terminal gravity is reached. Add dry hops. After 3 days, cold-crash, package, and carbonate. |

Notes: So then, from my extensive reading today:
Your most well-known DIPAs use anywhere up to 95% 2-row in their malt bills. Cloudwater, for their first ever DIPA, used 97%, 2.9% glucose and a couple of acid additions! Caramel/rolled oats/lactose for body and a sweetness to help balance out the rhubarb and hop additions.
I've scaled back the hops to let the rhubarb come through - it may be that even that is too much, but the key (again from my reading) is to add barely anything to the boil - it's all whirlpool and dry. Centennial/chinook/citra is a combo I've liked in previous Cloudwater efforts too.
So, I'm hoping this will be chewy, thick, have a real knockout hop aroma and a sweet/tart balance in the flavour. Feel free to make suggestions! |
