Notes: Steep grain in 5.5 gal of 153°F (67°C) water for 30 minutes, then raise the temperature to 168°F (76°C). Remove the bag, rinse the grains, bring to a boil and add DME and hops.
Fermentation temperature in the 66–68°F range. Add the 1 oz of medium toast American Oak Chips after primary fermentation is complete, allow 7–10 days of contact time. Add the dry hops 3–7 days before packaging. |

Based on multiple clone recipes of "Todd the Axe Man IPA". LIam altered it some to excel at the points where the original excels while being tailored to our familys collective taste preferences.
- important to prevent mash temperature from being too high. previous version of this beer was a bit too malty due to the mash running a bit hot.
- at the end of sparging that not exceeding 168–170 °F (76–77 °C) is the most important. if its lower, not the biggest deal, potential loss of probably .2 to .4 ABV absolute max using room temp water in a light sparge. w/e.
New Whirlpool Method for 2021 and beyond
1. Add Whirlfloc @5 mins left on boil, add yeast nutrient if desired. 2.5 tsp per fermenter.
2. Add 0 min hop addition
3. cut flame/ heat and whirlpool with hops in kettle. Wait 10 minutes
4. Take out Hops and Cold Crash after this rest period

Notes: Unpasteurized Wildflower Honey
2:1 ratio Honey:water for semi sweet mead
Boil 2 gallons of filtered water to sanitize it. Add 6 lbs of honey just after turning off boil at 200 degrees F.
Mix thoroughly with sanitized spoon and transfer to sanitized carboy. Let cool to 70 degrees F and then add yeast, sealing with sanitized airlock. Basically leave overnight and add yeast the next day.

Excellent. It is primed and conditioned with Sierra Nevada yeast, so it should settle out nicely by the weekend. It came out really clear since I lagered it for 8 weeks.

Mash at 148 F, 30# German pilsner malt
Fill kettle, and add 2.5# organic can sugar to boost gravity to 1.080

YEAST: 2 to 3 packs (or make an appropriate starter) Wyeast 1388 Belgian Strong Ale yeast or White Labs WLP570 Belgian Golden Ale yeast , or 2 packs Belle Saison dry yeast.
MASH:
Mash-in to reach a beginning mash temperature of 131F (protein rest) & hold for 20 minutes. Ramp or raise the temperature of the mash to 146F (saccharification rest) and hold for 60 minutes. Finally, ramp or raise the temperature to 168F (mash-out) and hold for 15 minutes. Lauter and sparge to collect enough preboil volume to allow for a 90 minute boil. Proceed with the 90 minute boil, adding the Simplicity candi syrup in the last 15 minutes of the boil.
Chill to 64F, pitch yeast, and allow to raise to 82F over the course of 5 days. If unable to raise this high, raise as high as possible.
Ferment at 82F for 2 weeks. Then cold crash and lager at 32F for 3 weeks before bottling in Belgian bottles or kegging. |
