Notes: Mash low with 1 vial of WLN4100 Ultra-Ferm
Lauter mash but do not heat to allow enzymes to continue to break down sugars
Sparge, lauter and allow wort to stand for ~30 minutes to allow enzymes to continue to break down sugars
Boil for 60 minutes and follow hop schedule - I used a different hop schedule than Kim did.
It is recommended you add more yeast nutrient to fermenter half way through fermentation
Edit 9/18/18 - My first run on this came up a bit short on FG (1.006). Still pretty dry and amazingly juicy, but really want to get it down to <1.000. May try 2 vials of the WLN4100 in the mash next time and maybe some glucoamylase in the fermenter. |

Mesking på 66 grader i 60 min. Utmesk på 77 grader i 5 min hvis du har mulighet til å øke temperatur i mesken.

Mash grains at 152 for 60min, sparge at 168. Add dextrose at end boil. Chill wort to 65 and fement for 4 days, then allow temp. to rise to 68 degrees and ferment to completion. Dry hop for 3-5 days then rack and package.
I'm guessing you start wiyh RO water and add the 1 gram of Calcuim Chloride and 1 gram Calcim Sulfate per gallon.
Yeast note: Chinco ale yeast( American or California ale yeast) 2L starter
My notes, I'd probably use London Ale III 1318 or a NorthEastern type of yeast.
HOP NOTES
He's saying use 6 oz of Citra at end boil and do a 20 min hop whirlpool, that would make this a lot higher than the IBU's showing |

MASH
1.5 quarts per pound of grain (8.50 lbs grain x 1.5 = 3 gallons+3 cups of mash water)
normal calculation is to take desired mash temp, add the grain weight, add 5 degrees.
152 +8.50 +5 =165.5 degree strike temp
BOIL
Consider adding ABV booster
Crystal Hop substitutions: Hallertauer or Liberty
DUNK SPARGE
Heat 1.5 gallons of water to 170 F. Remove bag, squeeze, place in bucket, dump 170F water on it, let sit 10-20 minutes and pour that back into your boil kettle. If you have some left over you can add that to the boil to reduce boil off volume.
PRIMARY
14 Days at 68 Degrees
SECONDARY
Secondary w/ Gelatin Finings
• boil 2/3 cup water to sterilize
• wait until temp reaches 150°
• stir in 1 tsp gelatin until dissolved
• let sit for 10-15 mins to "bloom"
• do not let it cool below 120°
• dump in secondary
• rack beer into secondary on top of gelatin
• let sit 24 hours at 68°
• drop temp to as close to 40° as possible for 2-3 days
• transfer to bucket and bottle
