Notes: Brew date 11/2/23 Mash 90 at 145, boil 90 start 88 gal boil, transfer to fermenter at 62 starting ferment temp with free rise to 82 planned. INIS 201. Og 1.080 used 25 lbs of white sugar because the bag had 25 instead of going with 20 lbs, no other reason.

Notes: Mash at 65°C for 60 minutes. Boil for 15 minutes.
Split the batch into 2 fermenters (20L each, 5.3 gallons). At high krausen (24 hours after pitching yeast), add 2.4 kg of fruit mix to each fermenter.
