Notes: Ferment with T58 yeast at 72°F for 2–3 days,
then let it free rise to 76°F to finish out. Rack into secondary
fermenter and add black currants and WY3763 yeast. Once desired sour level is met (4–12 months) add Consecration barrel oak chunks and let stand until desired oak character is achieved.

Notes: T0 (Mash):
Bring 1Gal of water to 160F, with salt additives
Add all Grains to Bag
Turn off heat, add brew bag to water and stir to break up clumps.
Verify water temp is ~150(and adjust) and put lid on.
T60Prep:
Fill electric kettle with water
Measure 60m Boil Hops
T60 (Boil):
Raise temperature to 170f for mash-out and stir.
Remove grain bag.
Heat up full kettle to 212f
Heat mash to a boil
Turn off heat
Add 4LB of Pilsen malt extract
Add 1LB of Golden Light Extract
Add hot water to "fill" pot
Turn heat on and bring to a boil
Add 60m Boil Hops
T90:
Add 3LB Golden Light Malt Extract
T110:
Add 10m Hop Addition
T120:
Add 0m Hop Additions and let chill
T120 (Chill and move to fermenter):
Move brew pot to water bath to chill
TWortChilled:
Once wort + water are in fermenter at 70degrees

Notes: -Aroma hopping at flameout passing wort through a plate chiller and pumping it back around through hop spider until temperature reaches 25 ℃.
-Dry hop at 1.016 (for biotransformation) for about 5 days.
-Expect to lose about 1 litre to dry hopping.
-Keg and carbonate 19l to 2.4 levels of carbonation. Bottle remaining 4/5l.
-Chill Cornelius keg in chest freezer for a day to 0℃, connect to CO2 at 7.4 psi and leave for at least 5 days. |
