| Notes: This is a Scotch Ale base for a Winter Warmer. Mash all grains at 152F for 60 min. Mash out at 168F for 10 min. Add dried malt extract and maple syrup at 60 min in the boil. Steep the cherries in about 2 quarts of first wort runnings for about 30 minutes. Strain out cherries and add this to the last 20-30 minutes of the 60 minute boil. Add hops at times above. Ferment at about 64F. Add the vanilla and cinnamon in the secondary for 2-3 weeks. |

Notes: We will split the batch into two 5 gallons for fermentation. Jay will be using a German Lager Yeast and I will be using the S-23 so we can compare.
Ferment at 50 degree for 20 days, then Diacetyl rest at 60 degree for 3 days, than lager at 35 degree for 13 days.
Jay will bottle and Greg will keg and bottle.
Mash water: 10 gallons into fermenter + 2 gal boil + 1 gal trub + 2.25 gal for grain absorb (.075 x 30 lbs).

Notes: The yeast was actually Lallemand DY45 dry Winsor yeast, which was selected before other types of more precisely "Juicy" yeast became available after ordering.
Given the high OG, 4 packs of dry yeast were rehydrated and pitched into oxygenated wort. If the kruasen is mild, another injection of O2 will be added.
