Notes: 1. Bring 1.75 Gallons of water to 160F
2. Steep the Grains for 30 minutes (Use a grain bag for steeping)
3. Bring .5 Gal of water to 170F to Sparge the grains (Place the grains in a strainer and pour the water over the grains.)
4. Add only the Liquid Malt Extract
5. Bring to a roiling boil and add .5oz Wakatu Hops
6. After 30 min add .5oz Wakatu Hops
7. After 50 min remove from boil and add Dry Malt Extract, Lactose, .5oz Mt. Hood Hops
8. Add Irish Moss with 10 min left to boil
9. Add .5oz Mt. Hood hops with 5 min left in boil
8. Remove from heat and cool the wort to 70 degrees.
9. Take a Initial Gravity Reading.
10. Transfer the wort to the fermentor
11. Pitch the Yeast
12. Transfer to a secondary fermentor after 5 days (You may choose to filter the beer at this time)
13. After 5 days in the secondary, it is time to bottle.
14. Brew Espresso and add to bottling bucket
15. Dissolve 1oz of Dextrose in water at 160F and add to beer
16. After bottling, store in 65-70 degree dark area for 2 weeks and then in a cool area.
17. Open and enjoy. |

Notes: Brewing day went perfectly. next morning flocculation was very violent. Had to purchase Blow-0ff tubes. $8.00
Solution: Purchase 2 big mouth Bubblers. 6.5 gal. $60 ea.
- This one actually blew the tri-piece airlock off. Had to run out to HD first thing.
PS this is how I found out that HD does not open until 0800 on Sundays. :( |

| Notes: The cascade and citra hops are added to the APA in hopes of imparting a tropical phenolic fruit character to the beer. My favorite pale ales have a grapefruit or orange peel (Bell's Two Hearted and Oberon) flavor to them which I am going to try and artificially recreate using hops. |
