Notes: DIRECTIONS
Mash at 149°F (63°C) for 90 minutes, drain, and sparge to yield 5.5 gallons (18.9 l).
Bring to a boil and boil for 5-10 minutes.
Collect wort (O.G. 1.039) and pitch 200mL (2 Homebrew packs) of Lactobacillus Blend (OYL-605) at 95°F. Then let temperature naturally drop.
At 18-24 hours post-Lacto pitch, pH should reach 3.55 and temperature reduced to 75°F.
Return kettle to burner and bring to boil. Add hops and boil for 15 minutes.
Chill wort to 75°F. Pitch 1L starter of Hothead Ale® (OYL-057) and apply brew belt to carboy. Temperature climb to 90°F. Krausen should appear about 7 hours after pitching yeast.
Maintain 90°F fermentation temp.
When gravity reaches 1.013 and pH 3.34, cold crash for 7 hours and keg/force carbonate at 30 psi.

Notes: Mash at 67 for 60 minutes with rest at 40-50C for malted oats
Boil for 90 minutes
Add bittering hops at 50 minutes and complete boil
Recirculate via hop back for 35 and 20 minute additions at 90deg.C and 73deg.C respectively then empty.
Add "1 minute" additions to hop back once the wort has reach 66deg.C and transfer to fermenter via hop back then plate heat exchanger.
Aerate
Pitch yeast at 18.5deg.C and ferment to achieve fg.
Dry hop, recirculating via hop back, for days 1-2, 3-5 and 6-8. |

| Notes: First Brew. Followed instruction sheet from Northern Brewer for boil. Cooled wort with immersion to 60 degrees. OG Hydro reading 1.043 Pitched decanted yeast starter at 59 degrees into wort that was 60 degrees. Installed Brew Jacket and brought the temp up to 62 degrees. Good fermentation , not sure when it kicked in because no air in blowoff due to seal issue around plastic sleeve on Brew Jacket. Hydro reading taken at 51 Hr mark . Reading 1.016 adjusted for sample temp of 64 degrees. Estimate 5 degrees from target FG. Will raise temp in the morning to give yeast a DE rest. |
