Stand for 3 hours
Added dry hops 25/25 Nelson and enigma
Used frozen water to cool down (3 liters) and 1.5 liter room temp.
Pitched on April 25th.
Bottled May 1st.
Tasted after 4 days. Citrus aroma. A bit "green.". Need to leave in bottle longer but overall not bad.
After few weeks tasted really good, strong citrus, subtle tropical.
After 2 months, got too "winey" and tasted like white wine, wouldn't use Nelson hops again, not preference on taste.

Notes: A quick brew. Place extract in hot water for 20 minutes. Chop 4 habanero chilies and put in a hop bag. Use gloves. Bring 4 litres of water to a boil, and add the habanero bag. Boil for a couple of minutes. Transfer to fermentor. Add dry extract, stir, and then add liquid extract. Stir well. Fill up with cold tap water (total 22 l). Stir again, and oxygenate. Make sure the wort holds about 20-30 degrees C. Pitch kveik. Add dry hops on day 3. |

Notes: Added 3.5 oz lactose with 5 min remain in boil. Added 1 oz Amarillo at 10 minutes left. Cooled to 170 and added 1 oz mosaic and 1oz simcoe. Steeped 20 minutes. Cooled to 75 and pitched. Adding slightly less than 1/2 TBSP mccormicks vanilla extract at bottling. May have been higher than 170°. Dryhopped on Day 4 with 1 oz simcoe. Final gravity 1.020. Brewed 10/31/19. Bottled 1.75 gallons 11/11/19. Used 1.5 oz priming sugar. Filled 1 32 oz growler, one old Maine Beer bottle, and 13 12 oz bottles |
