Notes: use any bittering hop for boil. I used northern brewer
dry hop in primary once it reaches 70F or lower when you pitch yeast for 3 days
Heat 3.3 Gallons to 162, heat 3.5 gallons to 172 for sparge
Mix in grain. Draw 1 gallon from strike water and pour on top of grain to help mix in all grain - mash @152
at 30 min mark, extract 1 gallon and mix back into grain bed mash 30 minutes more
raise bed and drain. Collect 1 gallon and pour back on grain bed
ever 10 minutes pour 1 gallon of sparge water on grain bed
collect 5.5 to 5.75 gallon ( .25 extract keeps sluge at bottom of brewers edge and not in primary)
add hops and other additives as noted
boil 1 hour
after cool dry hop
move to secondary 4 days later

Notes: Followed the Bourbon County Stout tutorial on Homebrew Supply. It was quite in depth
https://www.homebrewsupply.com/learn/bourbon-county-stout-clone-recipe.html
Their oxygen and spaced out nutriuent regimen were a big help and even though it was my first big stout I had no fermentation problems
"You should also consider oxygenating twice, once at pitch, and once 12 hours later, to ensure the yeast has all it needs during its reproductive phase. You can charge your beer up to 8ppm of oxygen using an air pump oxygenation kit. In addition, you should look to add extra yeast nutrient to the beer. Adopting a staggered nutrient addition regiment, similar to that used by mead makers to ensure healthy and complete fermentations in high stress scenarios. Instead of adding the entire dose of nutrients when you pitch your yeast, simply add 1/3 of a full dose at pitch, another 1/3 after the lag phase has ended, and a final 1/3 a day later." |

Notes: NOTE: Whirlpool addition is IBU from co2 extract added at 60 minutes before flame out. It is only added as a whirlpool addition as that allows the calculation of IBU contribution. All other hops used as the standard convention.

Notes: Batch split in half. One half fermented with Wyeast French Saison and the other with cultured Saison du Pont and Saison de Lente mixed with a little peche brett tossed in on brew day for good measure.
Brew day - 4/6/13 - OG 1.065
Gravity going into secondary was 1.008 and was surprised to see that it had dropped even further to 1.003 at bottling.
