James Bond, of course! Combined with the fact that this is a "Russian Imperial Stout". Kate and her dad's side of the family have a fondness for old James Bond movies and I'm making this for her specifically because it's a style she likes.
Notes from recipe formulation:

- They report not having Chocolate around 440 L, but ask about it. That would be Briess Dark Chocolate for example.
- They report not having English Extra dark Crystal (~180L), but ask about it. For example: Simpsons English Extra Dark Crystal Malt 160L.
- Plan to make a yeast starter even for a half batch.
- Remember to ask for the dark malts to be milled separately!
- The fermentation temp is going to be a problem. Based on the instructions from the recipe, I'm thinking the thing to do is to chill to 64, then ferment in the closet upstairs. It will rise slowly to 74. That is cited as the top end of the ideal range. If it's a bit more estery, that seems more acceptable than underattenuating especially with this style. The robust malt flavors, I imagine can compete with the yeast character.

Hops: BSG brand Czech Saaz AA 2.4%.
Be sure to check specific AA of hops used and adjust hopping rate appropriately to achieve IBU 30 +/-.
Primary 30 days @ 68 F. Sealed container, leave on yeast cake.
OAK
3 oz Med or Med+ oak cubes. Soak in Jim Beam bourbon for 30 days. Decant the bourbon at 15 days and add fresh.
CURIEUX
At 30 days, rack to secondary.
Measure FG.
Add bourbon-soaked cubes (but not the bourbon).
Secondary for 3-12 months @ cool temp, depending on taste.
Add 0.25 to 1 cup of JB bourbon during secondary, depending on taste.
