Notes: Brew Day:
Add lactose at 5 minutes remaining.
Add brown sugar at flameout.
Add whirlpool hops at 165 degrees for 20 minutes
Bananas Foster Addition (Day 2–3):
Slice 6 lbs very ripe bananas.
Sauté with 4 tbsp butter and 2 cups dark brown sugar.
Add 1 tsp cinnamon and cook until caramelized.
Deglaze with 1¼ cups dark rum (Plantation Original Dark Rum).
Cool completely before adding to fermenter at high kräusen.
Dry Hop Addition (Day 5-7):
2¼ oz. Citra
2¼ oz. El Dorado
(start tincture for Oak & Rum addition)
Oak & Rum Conditioning (Day 10–14):
Soak 3 oz medium toast American oak cubes in 8 oz dark rum.
Add 2 split vanilla beans to the soak.
Steep 5–7 days.
Add cubes and rum to beer in secondary.
Taste every 3 days and remove oak when caramel-vanilla character is pronounced.
Packaging:
Add ¼ cup vanilla extract

Notes: First batch produced 9 gallons of wort.
Pre-boil Gravity: 1.060 (62% efficiency)
Boiled until 8 gallons and then started the hop addition.
Batch size in fermentor roughly 5 gallons due to the hop's water absorption and debris.
Next brew should collect 10 gallons of wort (which should bring up the efficiency).
Boil until 9 gallons (60 minutes).
Then start the 60 minute hop addition.
