Notes: Note that I brewed this and combined with 4 gallons of low-gravity (between 1.035 and 1.036 SG) unpasteurized, unfiltered hand-pressed apple juice and no added yeast (just whatever wild yeast is in the apple juice) to make a cider/lambic low-temp (~10C in my fridge) coferment. The idea was to create a cider/lager coferment, but I had higher efficiency than expected, which pushed my lager into lambic territory.
Fermentation began on Sept 12 (when I pressed the apples), lambic was added the next day (the apple juice hadn't started fermenting in this time). I took a sample to spin on my spinning plate at room temperature to hopefully propagate some yeast (see the erlenmeyer flask in the photo), which I added after 24 hours of propagation. As of this log entry on Oct 4, the 1.045 SG juice/wort has dropped to 1.031.
Assuming the 4 gallons of cider would have dropped to 1.000 and the 3 gallons of lambic would have dropped to 1.016 (as estimated by this recipe), the final expected gravity should be 1.007. I will be removing from the fridge at 1.012 to undergo diacetyl rest for the last 5 points of gravity.
Update: I took the lager/cider out of the fridge at 1.012 for diacetyl rest, and it actually continued fermenting down to 1.004! Whatever yeast got in there is a beast. |

Starter:
* Used 2L starter on ~3 month old yeast. Pitching rate probably not as high as in linked recipe.
Mash:
* Make sure not to exceed 65C in mash
* Take 4L of first runnings for boil down (see below)
Boil:

* Chill wort to 18C

- Set ambient Fridge temp control to 19C (probe ambient in fridge
- Wrap fermenter in blanket
- Allow to naturally increase temp to 27C. Add external heat to get there if required.
- Hold at 27C until SG reaches 1.015-1.018 (~5 days)
- Bring back to 18C over a few days
- Wait until terminal gravity reached (~1.012)
- Hold for one more week
* Secondary Fermentation:
- rack to secondary (air tight fermenter or keg)
- hold at 10C for 40-60 days
* Bottle condition with champagne yeast
Substitutions:
* Substituted Warrior instead of Brewers Gold for bittering hop (not available)
* Substituted home made Belgian Candi Syrup for D-180 (not available)
Clear wort boil-down:
1. Extract 4L of wort at the beginning of clear runoff into a 15-20L pot.
2. Boil the wort down until it becomes a dark mahogany brown and is bubbling with large bubbles.
3. Be careful NOT to burn the maltose syrup.
4. The result will be approximately 700 ml of syrup.
5. Re-crash the syrup by adding wort from the ongoing main boil.
6. Pour the dissolved liquid back in to the main boil.

Notes: Step infusion mash: add 9 quarts (8.6L) of 130°F (54.5°C) water to the grains. Stir, stabilize and hold the temperature at 122°F (50°C) for 30 minutes. Add 4.5 quarts (4.3L) boiling water. Add heat to bring temperature up to 150°F (65.5°C). Hold for 60 minutes.
After conversion, raise temperature to 167°F (65°C) lauter and sparge with 4.5 gallons (17L) of 170°F (77°C) water. Collect about 6 gallons (23L) of runoff for the wort. Add bittering hops and bring to boil. Boil time is 75 minutes.
Fermenting and Conditioning
Ferment around 68°F (19°C) for four to six days. Transfer to secondary fermentor and add 0.5 oz (14g) crushed coriander seed. Age for two weeks. Condition above 60°F (15.5°C) until carbonated and clearer. |
