Notes: January 07, 2023 - Mashed grains in directly at 153.5°F for 60 min. Sparged with 185°F water. Collected 6 gal @ 10 Brix. Added 1 gal water, gently boiled for 90 min. Hop charges added per recipe.
Carboy has between 4.5 - 5 gal @ 11 Brix (1.044) - Interrupted!!
Lower efficiency than normal...sparge too fast, Czech malt? Also much greater efficiency with decoction...need to make the time for this on these beers

| Notes: Mash/Sparge as usual, heat up to 200 degrees, then cool to 110. While cooling, adjust pH to ~4.8. Pitch lacto 12 hours, keeping warm (70-90 degrees), then cool to 65 and add yeast. Add fruit once fermentation is complete, preferably in a secondary fermenter. |
