Notes: Thursday 28th March, Brew day. 2 handfuls of rice hulls helped greatly with the Lautering.
Weirdly, the brewhouse efficiency is over 100%. The s.g. is 1068.
Two packets of Safale us-05 used.
Got 22 ltrs @7.8% so added 3 ltrs of filtered water to bring up to 25 ltrs
Final Gravity 6.8% Abv.
Bottling day: 6th April 24. Added 180grms of table sugar. Carbonation was low in beer prior to bottling. Got 45 bottles of beer, smells and looks Great. Back in warm place for a month.

Notes: Making some adjustments from version 7 due to availability of the malts and hops. Version 7 ended up being the best one I have made yet.
Will be trying a bunch of yeast through this series. Cosmic Punch is a good one if you have the right hops. Trying to clear out the samples I got at HBC 2022 Pittsburgh, so there's some whole cone stuff and lupulin pellets. Not sure if it's really going to go, but will find out with Verdant and K97 co-pitched.
Also bought some Oast House Strata Extract and will add that at kegging. Recommendation was for 0.5 mL for 5 gallons at kegging.
If you're wondering, the rye adds considerable body along with the spelt (wheat) and oats. It's pretty thick
Back on my BS again for round 6. This time throwing in what oats I had and emptying out the freezer leftover hops. |

Notes: Dose fresh hops at 5:1 compared to dry, due to water content.
Some mash hops, some boil hops, big hop stand/WP additions. No dry hopping. Don't have fresh hops that can wait that long.
Whirlpool @ 180F with pellets to get solid base.
Hop stand @ 15 min with fresh hops, for fresher character. 20min max.
May use lautertun for Brewzilla for hops, and dunk repeated batches for 5-10min, strain and exchange. Lots of hops, not sure how much wort I'll lose. Will see! Hot side oxidation? :O

- 당초 스파징 계획은 15L 였으나, 실제 스파징을 진행했을때 14L 정도 스파징 진행시 프리 보일사이즈로 계획했던 25L를 초과해서 실제 스파징은 14L 진행함/물은 넉넉히 18L정도 끓임.(sparging 14L)
- batch size는 당초 19L정도로 예상했으나, 약 18L 조금 넘는 수준 확보됨/계획한 스파징 15L를 다 했다면 19L의 batch size와 계획했던 OG값을 확보했을 것으로 판단됨. / boill time을 90분으로 진행하고 곡물의 물 흡수 등이 예상보다 많아 계획한 batch size를 얻지 못함.(real gained batch size 18L)
- 드라이호핑은 발효 완료(7일) 후 7일간 실시(dry hopping 7 days)
- 발효 공간 온도는 22도 유지 (fermenter temperature 22 C)
- 수율은 정확히 얼마나 나올지 모름.
- 드라이호핑은 다시백 이용 28g 진행
- 실제 mash온도는 당초 66도 보다 1도 정도 낮은 65도 정도에서 진행됨. |
