2 gallons of tap water warmed up.
15 minute Oat steep @ ~172°F.
Added DME after removed the bag of oats (this got the volume back up to 2 gallons -- with some water added).
Had a slight boil over after adding the Saaz, sadly. Wasn't much thankfully.
OG ended up being a 1.032 at a temperature of 75.4°.
FG ended up being a 1.004 at a temperature of 73.9°.
Added a half teaspoon mixed with one cup hot water (~170°F) to the keg. |

Steps
1. Mash in at 145°f for 60 minutes; if hops have to be used, then make sure to add the hops to the mash.
2. Bring the wort to a boil and then turn the heat off (no need to boil for more than 15 minutes).
3. Adjust PH ~4.2 to limit growth Clostridium butyricum and other potential off-flavor bacteria.
4. Chill the wort down to 95°f, add Lactobacillus, and allow it to sour for 24 hours.
5. After the souring phase, chill the soured wort down to ~70°F and pitch sacc yeast and brett.

Soak 3 oz cocoa nibs in vodka for 10 days. Add flavored vodka to secondary for 8 days.
Add 2 oz coarse ground swiss chocolate coffee to secondary for 8 days.
*Forgot knockout hops, made a hop tea, added to secondary.
-racked to secondary after 2 weeks (FG 1.020).
-kegged after 8 days in secondary (armoa is chocolaty with a mild coffee). (Taste is similar, not bitter from coffee or nib; sweet) FG is only 1.020-disappointing.
ABV 4.0% (plus added vodka)
Excellent result: many high compliments at wedding. Great coffee choice and method (dry hop) and chocolate addition method. |

1) Use the Bavarian Wheat DME to make a 100g/1L starter for the Omega lacto blend 24-48 hours before brewday. No stir plate, put on an airlock and just leave it alone. Anywhere between 70-90f is fine.
2) Brewday - heat 6gal water to 200f, add DME and stir until its all dissolved. Thats it! Cool the batch down to 90f, rack to fermenter and pitch 1L lacto starter.
*Very Important - you need to be very careful not to oxygenate the wort or this could ruin the beer. To limit oxygen exposure use a smaller fermenter, or up the batch size, so that the fermenter is filled completely full leaving only about an inch of headspace between the wort and airlock. OYL605 doesn't krausen so don't be worried.
3) Leave fermenter in the 70-90f range for 24-72 hours, depending on how sour a beer you want. You can do this to taste if you'd like. Once sourness has been achieved, rack back to the kettle and pasteurize for 30mins at 180f.
4) Cool, pitch plenty of healthy yeast, and proceed like any other beer. At this point you can oxygenate the wort before pitching your yeast if you'd like. Thats all there is to it you'll shortly have an easy going Berliner to drink!! |
