Notes: Mill the acidulated malt. Place it and the hops in a grain bag and steep using 1.0 gallon (3.8 L) of 154 °F (68 °C) water for 45 minutes. Rinse the grain bag with about 2 quarts (1.9 L) of water and allow it to drip into the kettle for about 15 minutes, but be sure not to squeeze the bag.
Add enough water for a pre-boil volume of 2 gallons. Stir in both malt extracts and begin the boil. The total wort boiling time for this recipe is 10 minutes. At the onset of a full rolling boil, add both the ground coriander seed and the salt.
Cool the wort to 68 °F (20 °C), transfer to your fermentation vessel and aerate the wort adequately. Add the contents of your yeast starter to the chilled wort. Ferment around 68 °F
(20 °C) until the final gravity is reached, which should be in 5 to 7 days.
Add raspberries to fermenter and allow the beer to mature another 5 to 7 days around the same temperature. Your beer is now ready to rack into a keg or bottles along with the priming sugar. |

Notes: "Greg's Classic Stout"
The only thing "classic" about this stout is that it's brewed the way Greg likes it! Nice and dry, but more hopped up and more alcoholic!
Don't use jet black roasted barley. Look for a deep dark brown colour roasted barley. Black or chocolate malt is no substitute when making a "classic" stout. Steep at 65-71C for 30 minutes then remove with a strainer.
Add gypsum for 60min boil (or don't add it).
Use English hops (such as Northern Brewer, Goldings, Fuggles)
Use Irish Ale type yeast (or English ale if you must). Aerate wort very well.
Enjoy within 3-4 weeks from brew day.
Consider swapping out some dark malt extract for additional head retention malt.
Can sub Northern Brewer for Wye Challenger. |

Notes: 25 ml Raspberry extract
i. 8 oz of oats seems like a lot. The bag was full
iv. Color a little beige at first, but became yellow with fermentation. Then turned brown after carbonation? I think this may be due to oxidation
v. Raspberry flavor overpowering
vi. Bitterness and malt flavor is good for NEIPA
j. Improvements:
i. Use a little less oats
ii. Use less flavoring
iii. Figure out this oxidation and coloring thing (NEIPA more susceptible to oxidation)
