I have been plagued several times by liquid malt extract that claims to be "light" when it's more pale or amber colored. Needless to say, this batch came out to be more like the color of a typical pale ale with a slight reddish tinge. |

| Notes: Steep 150-155 for 30 min, bring to boil. Add extracts and hops, adding nibs at 30 min, lactose and brown sugar at 15 min. Cool wort and pitch yeast, fermenting for two weeks. Rack on top of coconut and nibs for one week, or until desired flavor profile. Add small increments of almond extract at bottling, you want the almond to be present behind chocolate and coconut, not over powering. |

Notes: Update 1: My first recipe creation. Everything went well during brewing except for a 1.043 gravity which is a good .01 less than the estimate here. I assume it has to do with my inexperience with steeping grains. Other than that the initial taste is pretty good. Really sweet almost no real hint of hops; I didn't want a lot of the bitter hops flavor anyway so I'm ok with it.
Update 2: Fermentation was really active. Foamed up a good bit, but didn't need the blow off tube. A week in and the bubbles have all but stopped. Still really cloudy and a just a tad darker than the estimate here, but close. I'm actually impressed at how accurate this site has been.
Update 3: Bottled it last night. Color was a nice amber and the ABV is at 4.5%. It's still very sweet, but it's a honey sweet. The hops do come through a bit now which is good since I was worried about that, however on the next attempt I'll double the initial Fuggles amount as well as the dry hop amount at the end. I used 0.85 oz of corn sugar to prime with so we'll see how it goes the next couple weeks. I ended up with 9 bottles; I maybe could have gotten 10 but it's not a big deal.
