Notes: Made a 2.2 L starter w/ 8 oz. DME (pale/pilsner mix). Put starter in the fridge after 12 hours to decant, but noticed globs of yeast jumping from the bottom cake 3 hours later (still in fridge). Took starter out of the fridge as i chilled the wort to 72 degrees. Decanted about a liter of liquid and pitched the rest. Would have liked to decant all of the liquid, but I figured there might be a fair amount of yeast still in suspension. I hope it doesn't screw the batch. Kreuzen forming activity w/ in 4 hours of pitching yeast. Still at 72 degrees in a room that is significantly cooler than that. I've got a fermwrap on it that will kick on at 69 and turn off at 70. Planning to ferment at 70.
Edit: I screwed up the hop schedule b/c when I originally was formulating the recipe it was as a 3 gallon boil. I did a 6.5 gallon boil, so I got more utilization. Still w/in the style, but will likely be more bitter than Fuller's. Time will tell.
After 3 days the beer was down to FG of 1.013. I was getting some jumping globs of yeast at the bottom of the carboy, which I suspect was off gassing giving some flocs a ride. This was still apparent, but minimal, when I racked on to .33 oz of EKG in secondary on day 8. Tasted ok. A bit fruity and perhaps a tad too bitter (see above). Based on some reading, I probably fermented too warm which upped the fruitiness. Still, I'm looking forward to seeing how it develops. |

Notes: Clone of McEwan's Scottish Ale - ABV target ~ 8% ABV
Make yeast starter at least 12 hours prior to brewing.
Brewing OG = 1.090
Ferment 7 days at 72º
Rack to secondary and add 1 oz. East Kent Goldings SG = 1.028
Ferment 35 more days at 72º
Bottle SG = 1.022 ABV = 8.8%
Make INVERT SUGAR 12 hours prior to brewing - recipe:
½ lb. pure cane sugar ("Turbinado" Sugar is best)
1/8 tsp citric acid
3/4 cup water
Dissolve sugar, add citric acid, and simmer at low heat for 20 minutes to 2 hours.
Steep/Mash grains for 30 min @ 156º Sparge @ 170º.
Add 6 lbs amber DME at boil.
Add 1 oz Kent Goldings at boil.
Add 3.3 lbs dark LME @ 30 minutes.
Add 8 oz. Invert sugar at 15 min.
Add Irish Moss at 15 min.
Add 1 oz. Styrian Goldings at 5 min.
Appearance: A blackish brown body with a slight reddish hue when viewed in front of a light and a pleasant dense tan head
Aroma: Caramelly malt with hints of cherry and spice playing softly in the background.
Taste: Big, sweet malt flavors immediately fill the mouth with dark fruit and vanilla behind it, and a slight tang coming through on the aftertaste.
Mouthfeel: Smooth, thick and almost oily (but not in a bad way!) with small tingling bubbles. You can feel a bit of heat from the alcohol.
Drinkability: This is a sipper for sure.

Notes: Ladies and gentlemen, prepare your palates...
Simply put, Headroom is the hoppiest beer we've ever brewed with more than 7 lbs. per barrel featuring heavy doses of Galaxy & Mosaic. This is a truly special Double IPA brewed only once a year, released during the last two summers to celebrate Hop Jam; Vermont's annual lupulin-centric beer fest. Headroom embodies our hoppy coup de grâce (for now)- we hope you enjoy!

Notes: Ferment for 2 weeks in a primary and 2 weeks in Secondary w/Agave Nectar. Agave Nectar was Worted w/2 Qrts of water as a 1to1 ratio, cooled over ice bath then pitched in the secondary. MAKE SURE YOU SANITIZE. This recipe gets close to the same flavor as Corona w/shot of Patron. (I still added a shot of Patron though.) Forget the Agave Nectar and you will have a Great Kegged Corona Clone Just dont use a secondary, go 4 weeks in the primary. Great beer for the keg.
Use pure Oxy to airate for 20 Sec. |
