Notes: Make yeast starter 2 days prior using 1000mL water and 4oz Bavarian Wheat DME and 1/2 tsp yeast nutrient boiled for 12 mins. Chill and pitch yeast, aerate using stir plate.
Use step mash to bring temp to 113F (10 mins), 122F (20 mins), 153F (40mins) and then mashout at 168F. Rinse with 2 qts 170F water; top off with 1 gal boiling water and bring to boil.
90 min boil
Add 1.5 lbs DME after 30 mins
Add 1.5 lbs DME after 60 mins
Add 1.5 lbs DME after 75 mins*
Add hops/extras* per schedule
* Addition of 2.5lbs pawpaws may bring liquid level to brim of boil kettle
Chill using wort chiller to 70F, siphon to 5 gal carboy and pitch yeast. Check gravity, and top off as needed to get to target OG
Ferment at 68F with blow-off tube, switch to airlock after ~3 days.
Increase temp to 70F for 3 days, then to 72F for until complete.
Auto-siphon in sanitized keg, bring to brewery, chill, and then carbonate to 3.5 vols CO2. Bottle using beer gun. |

Notes: Recipe based on article for Modern British IPA https://byo.com/article/brewing-british-ipa/ but made partial mash for "pots and pans" style back yard brewing!
1.Mash by putting grains into 5L at 67-70 degrees water for 60 minutes, using a chux cloth or a muslin bag
2. While mashing, Boil 4L of tap water and add 1kg of dry pale malt extract to sterilise for 5min. Then cool in cold water bath
3. Drain mash into boiler and sparge grains with 76 degrees water up to 9L in boiler
4. Add 500g remaining dry extract and first hop addition and boil for 75 min
5. Add last hop addition on flameout and sit in cooling bath for 15min
6. Into fermenter pour the sterilised extract, the grain wort (strained using household strainer) and top up with chilled distilled water to make 19L. Pitch yeast at 18deg and ferment at this temperature.
7. After primary (4-5 days) rack into secondary and add dry hop addition, remove hops after 4-5 days and bottle any at this point.

Instead of addind water after boil for target batch size, i'm boiling with more water for an hour instead of adding water at the end (i use tap water that need sterializing anyway...)]
At 15 min of boil, add 0.5 oz of crushed Coriander and 0.5 oz of Bitter Orange Peel
Add crushed apples on peak of first fermentation.

The mini-mash steeping time is 45 minutes at about 155 F. Drain bag and sparge. Bring wort to boiling and add malt extract. Bring back to boil and add 1 oz Strissel Spalt hops. (Note: Boil is only 30 minutes.) At 15 minutes add Coriander and bitter orange peel. At 5 minutes remaining add 0.5 oz Strissel Spalt hops. Cool down, add water for 5.5 gal, pitch yeast, and seal it up.
I added the apples on Day 3 of primary fermentation. I peeled, cored, and diced the apples before putting them in a sturdy zip lock bag and partially freezing them. The partial freezing makes the next step easier. Crush the apple chunks, let them thaw completely, and add to the wort. |

Notes: Typical of all my non-recipe brews, I am trying for a very strong, dark and warming brew for the colder months. My favorites are the darker, "chewier" styles that you can savor for a long while. Good cold, room temp or just sipping at whatever moment happens to be appropriate. I maintain that the best rewards come, not from another's labors, but from ones own heart. I will continue to choose my brewing contents by taste, smell and gut feeling.
