Notes: Place extract in hot water for 20 minutes. Chop the habanero chilies. Bring 3 litres of water to a boil, add sugar, DME and the habaneros. Boil for a couple of minutes. Transfer to fermentor. Add liquid extract. Stir. Fill up with cold tap water (total 24 l). Stir again, and oxygenate. Pitch yeast / kveik slurry. Add dry hops and passionfruit puree on day 2 or 3. |

Notes: I have been tweaking this recipe for a while. I want this to have more of a malty taste up front, and less hops as the end flavor.
.. if you want a more hoppy beer, move the 10 minute hops to flame-out, then dry hop to your hearts content. |
