-Add Candied Orange/Lemon peels during dry hop
-Add Simple Syrup from citrus peels during whirlpool
Take the peel from 3 oranges and 1 lemon and blanch them. Here's a quick guide to blanching citrus fruit:
-Add peels to pot of cold water (enough water to cover peels)
-Heat water to a boil
-As soon as boil starts, remove from heat, strain peels, and dump water.
-Add more cold water to pot along with strained peels
Begin process again.
-Repeat this entire process 3 times and make sure to remove the pot from the heat and strain the fruit as soon as a boil is reached. This process reduces the bitterness of the fruit. However, if you leave the peels boil, bitterness will actually increase.
Making Candied Citrus Peel
After blanching move on to creating candied peels. To do this make some simple syrup by dissolving 400 grams of sugar in 400 grams of water (a 1 to 1 ratio).Then add the peels and simmer for 45 minutes. After that put the peels in a food dehydrator and let them sit on low heat for about 24 hours.
Add a small amount of vodka to citrus peels to kill any bacteria before adding to dry hop
-No Secondary
-Hop basket used during whirlpool
-Hop sock used for dry hop and citrus
-Ferment 3 days add dry hops and citrus. Wait until fermentation completes

Notes: Brew went well but under shot the water. Only ended up with 19l in the fermenter. OG1.049/50 eff70% Yeast kicked off well at around the 3day mark and once it had stopped bubbling for 2 more days I upped the temp 2 degree every day for the yeast to clean its self up. I stopped when I had hit 20 and left it there for another 2 days |

Mash start 0815 - 4kg Gladfield Ale Malt ( self crushed ) and 240gm Gladfield Crystal. Mash start temp 67C allow to cool off with lid off so at 0845 now 65C.
Sparge started at 0955 - 1040. Good clear runoff so self crush seems successful.
Collect 20l and start boil at 1030. Collect another 6l add to kettle and add 30gm Pacific Gem into spider. Boil going at 1100. 26Litres.
Wort chiller in at 1150. Flame out at 1230.
Wort chilling started at 1530 - 1645. Whip out to get yeast as racked yeast from no5 not looking good. Too liquidy and green from dry hops??
Add
Start collecting into fermenter 1745 - 1845. 21 Litres. OG 1046-48.
Yeast( WhiteLabs British Ale Yeast ) pitched at 1915. Bubbling away happily Saturday morning 10am.
Distinctly different yeast smell coming from airlock. Tastes still of this yeast after 1 week. Yeast taste almost gone 19/3.
13/3 light bubbling suspect ferment well over.
Rack into SS26l. Add 40gms Fuggles pellets for dry hop. Back into fridge at 18C.
Drop temp 10 8C 19/3. Tasting pretty good 19/3.
Gelatine finings added 25/3 at 10.00.
Bottled 26th at 1600 - 19.5 litres. Still tasting nice with slight difference WhiteLabs yeast maybe.

Update 9/1/18, came out nice and clean but very boring. Malt is light, goldeny, tastes like a craft 'light beer' in ways but slightly more body/ABV. It was one dimensional so I added 15oz of fresh Centennial hops I had to harvest. Better, still a little bland but easy drinking. - Would go back to V2 for the next blond/golden. |
