-Add Candied Orange/Lemon peels during dry hop
-Add Simple Syrup from citrus peels during whirlpool
Take the peel from 3 oranges and 1 lemon and blanch them. Here's a quick guide to blanching citrus fruit:
-Add peels to pot of cold water (enough water to cover peels)
-Heat water to a boil
-As soon as boil starts, remove from heat, strain peels, and dump water.
-Add more cold water to pot along with strained peels
Begin process again.
-Repeat this entire process 3 times and make sure to remove the pot from the heat and strain the fruit as soon as a boil is reached. This process reduces the bitterness of the fruit. However, if you leave the peels boil, bitterness will actually increase.
Making Candied Citrus Peel
After blanching move on to creating candied peels. To do this make some simple syrup by dissolving 400 grams of sugar in 400 grams of water (a 1 to 1 ratio).Then add the peels and simmer for 45 minutes. After that put the peels in a food dehydrator and let them sit on low heat for about 24 hours.
Add a small amount of vodka to citrus peels to kill any bacteria before adding to dry hop
-No Secondary
-Hop basket used during whirlpool
-Hop sock used for dry hop and citrus
-Ferment 3 days add dry hops and citrus. Wait until fermentation completes

Notes: Sour Mash: 3 Days before brewing take 3 oz 2-row and and add to 150 degree H2o and cover. Add to grain bag on brew day.
Steep wheat and dextrin in 3-gallons of H2o at 152 degrees for 30-mins.
Remove grains and rinse into brew pot. Add the FW hop addition of Styrian Golden hops, malt syrup, and dry malt ext. Bring to boil. Add Magnum hops and boil for 60 mins with the additional at their time. |

Notes: Mill the grains and mix with 2.9 gallons (11 l) of 163°F (73°C) strike water to reach a mash temperature of 152°F (67°C). Hold for 60 minutes. Vorlauf until runnings are clear, then run off into kettle. Sparge the grains with 4.3 gallons (16.5 l) and top up as necessary to obtain 6 gallons (23 l) of wort. Boil for 60 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature about 60°F (16°C). Aerate the wort and pitch the yeast.
Ferment at 68°F (20°C). Cold crash, then bottle or keg the beer and carbonate to 2 volumes of CO2.
Tips For Success:
This should be a good “transitional” pale stout! More amber than gold, it’s still far lighter than a proper “dark” stout and still has the complex roast we expect (thanks to the pale chocolate and lighter-than-usual roasted barley from Briess) and the creamy mouthfeel (thanks to the flaked barley) that we deserve. Also, Brewmaster John Stemler notes that the Wyeast 1026 was the only yeast that did just the right things for this beer, and I’m inclined to take him at his word!
