Pitch yeast slurry. 4/23/2018: Added remaining 7 lbs 13 oz of heated and cooled persimmons to secondary fermentor and transfer beer to onto fruit. 5/11/2018: Racked to 50 bottles using paint filters at each end of siphon. FR: 1.010 ABV ~8%

This brewed iteration lacks a well-formed head and appears to be lightly carbonated. I can't be sure that the SGNO were added as specified or the Carapils was added in the mash. The edited version increased SGNO to 1 lb and Carapils to 10 oz. Likewise, I will bottle prime w/ 1/2tsp table sugar next time for better control (less variance as associated w/ carb drops) Approx $1.38 to $1.51/ 12 oz bottle

Brown rafts atop of a bubbly pellicle. 04/01/15 - Gravity at 1.010 PH at 4.0 Smell of brett, sewer, dirty pipes etc with some barnyard coming through. Brown rafts floating on top of the surface - no bubbly pellicle as before.
