Notes: Finally brewed this one last night - 11/27/2020
Needed more water for the initial mash, maybe 4-5 gallons because of the large amount of grains. Used a total of approx 10-11 gal of water to fill a 8 gallon kettle with probably 7.5 gallons. I got about a quart extra which I boiled on the side and added to the larger pot after it had boiled down some.
I neglected to have enough hot water on hand for the first sparge, so it was done at only 161 degrees. This may account for a slight lack of efficiency.
Used a yeast start made with one quart of DME, chilled to separate, and then poured off most of it and just saved the yeast cake on the bottom. 36 hours to ferment, another 6-8 hours to chill.
Adjusted hops calculation (AA) to what's on the package.
I got an OG of 1.070, not quite 75% efficient but damn close. Ended with 73% efficiency.
I should achieve my desired ABV of 7.5% if attenuation gets above 80%
Plan to let ferment for about 3 weeks, then keg.
UPDATE - 12/18 - Three weeks and @ 1.020. Not exactly what I was expecting but still a drinkable ale. Hoping the gravity will fall to 1.016 - 1.017 for ABV of 7%. Will probably give it another 2 weeks.
UPDATE - 12/30 - Racked into keg. FG of 1.013 for a ABV of 7.5%
Left in primary for a little over a month. Force carbonate @ 30 psi, should be ready in a few days.

Boil 1: 10 minutes. No hops, no sugar. Cool to 90F and ferment with Lactobacillus delbrueckii in a purged vessel.
Boil 2: 60 minutes. Add hops and sugar. Cool to ~60F and ferment with yeast prescribed below.
After fermentation/diacetyl rest, transfer beer into another purged vessel. Cold crash 48-72 hours.
