Notes: This is a very simple cider with few additives to let the apple flavor shine through. With proper aging, it produces a dry, fruity cider.
- Add 1g/L Malic acid to lower pH by .1 as needed to reach 3.7 pH.
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a 6 gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching rehydrated yeast.
- Primary fermentation: 6-8 weeks @ 50°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Condition 6 months @ cellar temps

Notes: This was a recipe tossed together and brewed in an evening after work for a challenge. The stipulation was to use Coopers Real Ale kit and make something unique with it.
This has a very odd flavor profile as you get the fruits, Fuggle hops and a fair bit of unfermented malt tones, and my batch came out with a FG of 1032 (OG was 1056) w/ a Ruby color so it either stalled or the kveik couldn't chew through the extract.
Berry mix used was a 500g bag of grocery store frozed mixed berries (Blueberries, blackberries, cherries, raspberries)
Instructions:
- Rehydrate DME in 2.5 Gallons of water and boil 20 minutes with Fuggle hops.
- Add the Coopers extracts and turn off the heat
- Toss in the frozen fruit stir and let it sit for about 20 mins to cool, top up with water to 5 Gal and transfer to fermenter fruit and all.
- After 5 days strain/syphon out fruit and transfer to secondary fermenter
Bottle around 21 days w/ 3.5 Oz of Brown/Golden sugar.
Gets better as it ages. *Update after 4 months in Bottle it is AMAZING, its like a berry Dubbel, caramel malty, tart fruit, very mild hop.

Not bad for a guysimply bored with his cushy job as a Maytag repairman supervisor.
This beer is essentially an I.P.A.,using Pacific Northwest Cascade hops instead of traditional EnglishKent Goldings. |
