Notes: OG was 25.9 brix, 1.106 SG.
Very active fermentation started within 12 hours.
Mulling spices were hand mixed: pepper, anise, allspice, nutmeg, orange peel, ginger, cardamom, cloves, cinnamon sticks. Everything was freshly ground except the ginger.
FG was only 1.050. Stuck fermentation suspected due to loss of a lot of Krausen and high concentration of not-easily-fermentable sugars.
No carbonation after 3 weeks of bottle conditioning. |

Notes: 1. Steep grains for 45m in 58oz of water
2. Add wort from grains to brew pot to create a 2.5gal boil
3. Bring the wort to a boil, and add 3.3lb of LME, 1oz of Crystal hops and the corn sugar and boil for 50 minutes
4. Add last 3.3lb LME and 2oz of Falconer's Flight hops
5. Boil for 10minutes
6. Cool wort to 180°F, add 2oz of Crystal hops and 2oz of Falconer's Flight hops.
7. Steep hops for 20m at 180°F stirring occasionally.
8. Cool wort, add to fermenter with enough H2O to create 5 gallons.
9. Take an OG reading
10. Pitch the yeast
11. After 5 days add 2oz of Falconer's Flight
Note: Rack to a secondary prior adding the hops if desired
12. After 5 days - bottle
