Max Brown of Antioch, California, a member of the Diable Order of Zymiracle Enthusiasts (DOZE), won a gold medal in Category 17: American IPA during the 2022 National Homebrew Competition in Pittsburgh, Pennsylvania. Brown’s American IPA (17) was chosen as first out of 117 entries in the category.

MALTS & ADJUNCTS

HOPS

Directions:
Mash at 148°F (64°C) for 60 minutes. Boil 60 minutes. Use a hopback for the whole cone hops. Pitch yeast at 65°F (18°C) and allow to rise to 70°F (21°C) over 5 days. Rouse the yeast and hops through the bottom of conical, and after 48 hours at 70°F (21°C) crash to 32°F (0°C), adding Biofine in the fermenter if you can and have time. Otherwise, use Biofine in the keg. |

Notes: Changed recipe to add a little sugar to see if this can help dry the saison out a but more.
I'm also going to go for a LARGE yeast pitch - Looking at a double pitch i.e. Lager size pitch.
I will also focus more on ramping up to 27/28cc. Changing .5c per day from day 4-5.
HOPS - Saw an article which used Lemondrop hops. I thought this would add a nice element to the saison spice. |
