Mash grains for 60 minutes (starting temp 160 F, ending temp 148 F). Add 8 lbs LME to boiling H2O, return to boil. Add 2.5 oz Simcoe pellets, boil 30 minutes. Add 2.0 lbs DME, add wort from partial mash, return to boil. Add o.5 oz Simcoe and 0.5 oz Azacca pellets, boil 15 minutes. Add Irish moss, boil 15 minutes. Remove from heat and add 0.5 oz Azacca, let sit for 10 minutes, stirring occasionally. Cool in cold water bath. Add 1 tsp Fermaid K and pitch yeast.

Notes: Mash/steep grains in 3 gals distilled water with 3g gypsum for 60 mins at 152F (156F strike water). Mashout at 168F. Sparge/rinse with 0.5 gal spring water at 170F. Strain grain bag, and top-off with 1.5 gals boiling water to achieve 4.5 gals starting volume
75 min boil.
Add DME in thirds (1.25 lbs at 15 mins, 37 mins, 60 mins into boil)
Add hops/extras per schedule.
Chill to 70F using wort chiller (leave hop bags in), and auto-siphon into 5 gal carboy after first adding yeast starter via funnel.
Top-off to ~4.5 gals per dilution calculator to achieve target OG.
Ferment at 68F. After ~ 5 days, if near FG, add dry hops (leave these hops for 7 days). |

Mash grains for 60 minutes - starting temp 160 F, ending temp 152 F. Bring H2O to boil and add LME. Add grain mash to brew pot, return to boil. Add 1 oz Cascade, boil for 30 minutes. Add 0.5 oz Cascade, boil for 20 minutes. Add honey and 1 tsp Irish Moss. Return to boil and boil for 10 minutes. Cool and pitch yeast (rehydrated in H2O). Add 0.5 oz Cascade Hops. Added 1.5 tsp Fermaid K 42 hours after pitching.
Sg = 1058 on 9/17/18, Rg = 1009 on 9/28/18, Bg = 1008 on 10/14/18 with 5 oz priming sugar
Not my best beer. Too bitter for style. Dry hop experimental also failed with this honey beer. Phenol present. After 8 weeks, over carbonated as well. |
