Add 2 oz Idaho 7 at 1.017 using mesh bag into fermenter for 4 days
Add 2 oz Idaho 7 at terminal for 2 days
Cold crashing whole fermenter for 1 week. I've usually racked to a keg and crashed
At Carbonation and Tasting - good head retention, successful filtration using 98% 3 micron Bev brite. Color resembles a red ale. Overall one of my better brews. |

| Notes: Soak 3 ounces of medium toast oak cubes in 12 ounces of bourbon for 2 - 4 weeks prior to adding to fermentation. Drain off bourbon and add cubes to fermentation two weeks after pitching yeast. Age for four weeks before bottling. Add 6 ounces of bourbon to bottling bucket and bottle condition for 2 weeks. |
