Notes: Steep grains in 2.5 gal water at 150 deg F for 30 min.
Add wheat malt LME and DME, bring to boil.
Add EK Golding hops, Irish moss at start of boil.
Add spices for last 15 minutes.
Add Tattnanger and Hallertau hops for last 5 minutes.
Cool wort, bring volume up to 5-5.5 gallons, target OG = 1.069
Lager: pitch 2 sachets of Saflager S-23 at 65-70F. Allow fermentation to start for 24 hours. After 24 hours, lower temperature to 50-55 deg F for 3-4 weeks. Transfer to secondary and lager at 35-40F for 4 weeks. Keg and carbonate.
Ale: pitch 1 sachet of Lallemand Belgian Saison yeast at 65-70F. Keep temperature at 70F or lower. After 12 days, transfer to secondary. After 7-10 days, cold crash for 48 hours at 35-40F. Transfer to keg and carbonate.

Notes: Found this listed as Brithish Bitter (sp?) in Brewer's Friend and copied it to my recipes. The late edition extract is available as Maillard Malts, Maris Otter Malt Extract from Northern Brewer. The name brands of the DME are Munson's DME LIght and steeping grains Fawcett Cara Malt respectively. All available from Northern Brewer.
I want to try this recipe for a traditional British Bitter session beer.

Notes: 1. Steep grains at 155 for ~20 mins. Discard grains.
2. Rapidly cool to 100 degrees F.
3. Reduce ph to 4.5 using phosphoric acid (I used 8oz which was probably WAYYY too much)
4. Pitch Omega Lacto Blend Yeast and keep it around 100 Degrees for 24-48 hrs. Add CO2 on top periodically.
5. Bring back to a boil.
6. Add DME and Alcohol Boost (corn sugar).
7. Add hops.
8. Boil for 60 mins.
9. Cool, add 2 more gallons of water, and pitch yeast.
10. Two weeks later, add oak cubes and 3 oz raspberry extract.
11. One day later (probably could've waited longer), add one small vial of red food coloring, and then bottle. |
