1. Steeping Grains: Place your crushed grains in the muslin bag and steep at least 1 1/2 - 2 gallons of water (or your full boil volume, up to 6 gallons) at 155°F for 15-30 minutes.
2. Add the Malt Extract: Remove the kettle from the heat source. Add the 6 lbs Pilsen LME while stirring well to avoid scorching on the bottom of the kettle. When the extract is fully dissolved, return the kettle to the heat and bring back to a boil.
3. The Boil: As soon as you see a rolling boil, set your timer for 60 minutes, and add 0.5 oz Hallertau hops (half the packet).
4. Late Addition: Boil for 50 minutes and add 1 lb Brun Fonce Soft Candi Sugar.
5. Hop Addition: Boil for 5 minutes and add the remaining 0.5 oz Hallertau. Boil for an additional 5 minutes and remove kettle from heat.
6. Cool and Aerating the Wort: Cool the wort to below 80°F
7. 1 to 2 weeks primary 65 to 72F
8. 2 weeks secondary |

Mill or coarsely crack the specialty malt and place loosely in a grain bag. Avoid packing the grains too tightly in the bag, using more bags if needed. Steep the bag in about 1 gallon (~4 L) of water at roughly 170 °F (77 °C) for about 30 minutes.
Lift the grain bag out of the steeping liquid and rinse with warm water. Allow the bags to drip into the kettle for a few minutes while you add the malt extract. Do not squeeze the bags. Add enough water to the steeping liquor and malt extract to make a pre-boil volume of 5.9 gallons (22.3 L) and a gravity of 1.043 (10.6 °P). Stir the wort thoroughly to help dissolve the extract and bring to a boil.
Once the wort is boiling, add the bittering hops. The total wort boil time is 60 minutes after adding the bittering hops. With 15 minutes left add the Irish moss or other kettle finings and at five minutes left add the last hop addition. Chill the wort to 68 °F (20 °C) and aerate thoroughly. The proper pitch rate is 9 grams of properly rehydrated dry yeast or two packages of liquid yeast.
Ferment around 68 °F (20 °C) until the yeast drops clear. With healthy yeast, fermentation should be complete in a week or less. Allow the lees to settle and the brew to mature without pressure for another two days after fermentation appears finished.
Toast the coconut at 325 °F for 25-30 minutes, stirring halfway. Add in a grain bag 2-3 days into fermentation. Add cocoa powder at this point as well.
Rack to a keg and force carbonate or rack to a bottling bucket, add priming sugar, and bottle. Target a carbonation level of 1 to 2 volumes depending on your packaging. Serve the finished beer at 50 to 55 °F (10 to 13 °C). |

Notes: Golden Promise - 60' at 154 degrees. Caramel Malt = bring to 165 deg F and sparge. Boil w/ bittering hops. Ginger - boil peeled raw root medallions for 20 minutes and hold "tea" to add at end of boil. Make Yeast starter (12-16 oz as brewing begins).
Crush coriander seeds - separate into 1.0 for boil day and 0.7 oz fpr secondary at racking.
Add Breiss light pilsner malt extract + initial coriander seeds - last 15' of boil. Add I Moss and yeast nutrient last 10' of boil. Add Aroma hops end of boil - wait 2 minutes and start to cool w/ wort chiller.
Honey - add after using wort chiller to chill wort to 100 F degrees (reduces loss or aromatics). Add ginger "tea" and cool to 75 deg F. Siphon to primary and add yeast starter. Notes: For the hops, there is no option for 'dried cones', so what I have done is select pellets, but decrease the utilisation. Therefore, the weight it shows should be correct for your dried hops. To calculate the utilisation I consider that one needs roughly 5 times more wet hops compared to pellets. Then I also note that after drying your 1kg of wet hops came to ~300g of dried hops. Therefore, your utilisation is 1 / 5 * 1000 / 300 ~ 66%.
Note the LME is split in an early and late addition. Sugar is late addition. Late addition should go in with roughly 10 mins left in boil.
If you don't have any yeast nutrient or irish moss on hand, don't worry too much, they can be omitted.
Ferment is the key for this bad boy. You wanna start it around 20C, then let it naturally increase temp while its fermenting. Try and put somewhere in the house where it will stay relatively warm, and maybe wrap it in a blanket. It will probably get down to about 1.010 within the first week, then it should slowly make it's way down to ~1.005 over the next couple of weeks. Just be patient. Maybe don't chuck your tilt in this batch if you want it for others in the meantime.
I chose a dry yeast cos it's easier. I haven't used it before, but its meant to be pretty damn good. I'd rehydrate it before pitching if you can be bothered. These instructions are pretty good: https://www.homebrewersassociation.org/how-to-brew/rehydrating-dry-yeast/. If you wanted to go liquid, I'd suggest Wyeast 3711 (French Saison). |
