Add grains, this should drop to 152. Let steep/mash for 60 minutes. We are seeking conversion here so maintain 152 as best as possible. Wrap kettle in towels, blankets, etc. Or transfer mash water to smaller cooler that has been pre warmed with hot water and mash in the cooler. After 60 minutes, bring wort to 150 and turn off heat, add DME, turn on heat and bring to boil. Watch for boil over and once hot break disapates, add hops and boil for 60 minutes. With 15 minutes to go add wort chiller to sanitize. when time is up, cool to 62F and pitch yeast.

Remove grain bag and let all liquid run out, then pour hot water over the bag until all sugars are in the pot. Add spring water up to 4.5 gallons and bring to a full boil. Add all your extract and stir it in. Then add your hops and boil for 60 minutes. Take off heat, add water up to 5 gallons and cool to 65 degrees. Transfer the wort to a fermentor add yeast, and top it with an airlock. Beer is ready to bottle once fermentation ends.

Ferment at 70˚F. 7-10 days later add dry hops for 7 days Transfer to bottling bucket on top of priming mixture Bottle or keg for 2-2.5 vols CO2 of carbonation.
