Hop replacements: Challenger, Fuggles, Hallertauer
Total IBU seems low, BierMuncher calls for 25.6.
For a 5.5 gallon batch, cut all quantities in half. |

Allow hot break of foam before adding lactose as boil approaches 100 degC
Did not see typical formation of zebra effect during flame out and cool down to 90 degC. Lactose addition may have caused this.
BM350VMS Specific notes
Use of Rice Hulls improved bed drainage. Was able to achieve +80% efficiency on this last brew.
Hit kettle volume on the nose at 13.5 gallons with fly sparge.
The 1.3 starting mash thickness factor was good allowing ~1" of liquid above grain bed at center of MT.
Cocoa nibs were soaked in JP Wisers Hopped Rye Whiskey from 12/20/2018 to Brew Date +1 Day. Nibs added at High Krausen or approximately 29 hours from pitch.

Chilled to 64ºF and left uncovered on stovetop for one hour before transferring to carboy and waited 3 hours before pitching 75mL of Crimson King yeast cake plus one vial of WLP655. Vigorous fermentation ~36 hours later. Holding steady at 68ºF.
9/15/15: Added dregs from Lost Rhino Exesus Sanctum.
10/4/15: Added dregs from Hanssens Oude Gueuze (Nov. 2014)
11/03/15: Sampled. (A hint of rubber stopper.) Peaches, cherry, a mild lactic acidity, a hint of hay, mild funk. Added OYL-218 All The Bretts (packaged 9-28-15). |

Notes: Kegged 3/12 - sample tasted great. Quick carbing.
3/14 Winner winner chicken dinner. Not much head, needs more carbonation. Dry as expected, great flavor, and despite the honey taking up part of the fermentables it still ended up in style and doesn't lack in anything. Nice crisp lawnmower beer. Prob add a tad of wheat next time for more head.
3/16 Increased the carbonation. The head problem is fixed, it now is nice and fluffy white. Persists pretty well. |
