Getting better at this - more of an art than science. I've found that getting the total water amount is key. On this one, I used close to 11 gal of water, a little much as I need to boiler longer to reduce volume. Quick Water Requirements under Print on this site is very helpful, although it's usually off on the high end, it still gives a great breakdown of what to expect.

Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs Pilsen Liquid Extract and 1lb Pilsen Light DME and return wort to boil
Add 2oz Simcoe hops and boil for 60 minutes
Add 2oz Northern Brewer hops and boil for 30 minutes
Add 2oz Cascade and boil for 5 minutes
Add enough bottled water to bring the specific gravity to 1.056
Add 2 packs of Saflager S-23 dry lager yeast
Fermentation:
Primary – 2 weeks at 60 degrees
Secondary – 4 weeks at 62 lowering to 35 degrees
Add 1oz Cascade hops to secondary 5 days before bottling beer
Bottle beer 5 days after dry hop addition
Bottling:
6 weeks after brew date
Use .2oz of corn sugar per gallon of beer.

21 liter maischwater begonnen
19 liter na maischen & filteren (spoelen met 11 liter), dus 13 liter verlies masichen en filter en spoelen en herverwarmen voor spoelen.
Na koken ongeveer 15,5 liter.
Koelwater 4 liter bevroren, 5 liter gekoeld. Was te weinig bevroren, want na smelten was temp nog circa 40 graden. Daardoor nog lang moeten wachten. Volgende keer voor deze verhoudingen minimaal 6 liter bevroren water gebruiken.
Uiteindelijk in de ton lijkt t op 23,5-24 liter, wat wel het doel was. Maischen was niet helemaal volledig leek het na dat uur (beetje blauwe uitslag nog met zetmeeltest). Original gravity niet 1075 maar slecht 1064. Corrigeer met rekentooltje voor alcohol in refractometer en je komt op 1.020. is dus 6% alcohol ongeveer.
Maischdikte van 2,56 liter/kilo was wel echt dikke pap, daardoor ook moeilijker maischen (roeren en temp stellen).
NA 9 dagen was SG 1036. Via berekening was de bedoeling 1016... |
