Notes: This beer turned out just ok. My OG that I measured was 1.041 but that may have been due to poor mixing of the wort when I topped off the bucket. My FG was definitely not where it needed to be at 1.020. I think my OG was probably close to what it needed to be since it's definitely not a low alcohol beer but it also didn't really carbonate well. The ones that did are enjoyable though unremarkable. |

Notes: My first DoY recipe…
Boiled the cracked grains in a steeping bag until boiling temperature…and held there for a minute or two longer…
Removed the steeping grains. Added the malt, brought back up to boiling. Added hops at the specified intervals. Taste of the wort was fine after the 60 minute boil and hops removed, but contained a noticeable amount (i.e. a metric ****ton) of Curdle-Looking-Things (CLTs) suspended in the wort.
Poured the wort into a one gallon jug using a funnel with a steeping bag laid over as a filter, ~15 minutes after heat was turned off. During this process the CLTs cleverly evaded filtration and regrouped within said jug, because of course they did. Placed an air lock over top of the jug and let it sit overnight to cool with an air locked bung on top. The CLTs slowly settled to the bottom of the jug, like a giant snowglobe gently burying any notion that I know what I’m doing.
Removed the airlock/bung and pitched the yeast the next day. Room temperature was in the lower 60s / upper 50s, so the wort was that temperature, maybe. Shook the jug to aerate the wort and crush any rebel yeast clinging to the neck of the jug, then re-placed the bung & airlock.
Moved to a room where I generally keep the temperature consistently within the range of human habitability. Replaced the airlock with a tube and and a(nother) one gallon jug partially filled with tap water for any blowoff in the early fermentation, and let it sit.
Switched it out for an airlock once the yeast had moved past the buckwild phase. Transferred to another jug for vanity’s sake, then bottled.
Beer tasted great.
The beer was good. Will brew again. |

Notes: Mash and Sparge: Use a simple single infusion mash. The wheat malt will provide plenty of body even though this is a low-OG beer. If you are an extract brewer, you can make the calculations for the jump to light speed and skip ahead.
Boil the Wort: Boil for 15 minutes, but wait to add hops. Hops inhibit Lactobacillus, which we need for souring.
Lower the pH: It's a good idea to lower the wort pH to 4.5. The lower pH helps prevent other bacteria or wild yeast from ruining the batch. You can use lactic acid, phosphoric acid, or even acid malt. 10ml of Lactic acid will get you there. Since we are after a lactic profile, it makes sense.
Fermentation Stage One: Cool the wort and start fermentation with Lactobacillus only. Keep it warm, around 112-115°F (44-46°C). You could use an electric blanket or FermWrap heater to maintain the temperature. Using one of the many electric mash kettle options, you can program the unit to hold that temperature, depending on your model.
Monitor pH: Check the pH every 12 hours. When it reaches 3.6-3.8, it's ready for the next stage.
Boil Again and Hop: Boil the wort again, this time for 60, and add a small amount of hops. Boiling kills the Lactobacillus and stops further souring. 10 IBU’s is a good start. Since hops will no longer impact lactic acid formation, who am I to judge if you want a hoppy sour?
Fermentation Stage Two: Aerate the beer and add your conventional ale yeast. Let it ferment out, then bottle or keg as usual.
