Notes: Step by Step
Bring 6.5 gallons (25 L) of water to roughly 150 °F (66 °C). Steep the chocolate and crystal malts for 15 minutes before removing. Add the DME and maltodextrin, with stirring, before heating to a boil. Boil for 60 minutes, adding hops at the indicated times left in the boil. At 15 minutes left in boil, add either Irish moss, Whirlfloc, other kettle fining agent of your choice to the wort.
After the boil, whirlpool for a couple of minutes before rapidly chilling the wort to slightly below fermentation temperature, which is 66 °F (19 °C) for this beer. Pitch yeast.
Maintain fermentation temperature to avoid producing excess esters. You may need a diacetyl rest for this strain so don’t hesitate to raise the temperature of the fermentation at least 4 °F (2 °C) during the last third of fermentation. Bottle or keg the beer and carbonate to approximately 2.6 volumes.
Tips for Success:
This amber beer is all about balance without sacrificing either the depth of flavor or drinkability. For the ingredients to really shine, ensure that you’re using the freshest versions of them possible. In addition, aim for gypsum and calcium chloride water additions to hit 247 ppm and 100 ppm, respectively. As is the case with most British ale yeasts, you’ll probably pick up a bit of diacetyl, so don’t be afraid to perform a diacetyl rest. When in doubt, microwave a beer sample for 30 seconds, which will volatilize any aromatics including 2,3-butanedione. |

Notes: Cold steep the 8 oz of Carafa in 3/4 gallons of boiled and cooled water for 12-24 hours prior to brew day
to get the dark color and a more mild flavor. You can use a boiled paint bag or just make it like coffee and filter the grains out with a strainer on brew day. You’ll get between 1/2 and 3/5 gallons after the grains absorb the water.
On brew day, collect your boil volume and raise temp to 150 degrees - steep 1 lb Caramunich for 30 minutes. Don’t pay attention to the mash pH calculations in this
Add in the LME and DME, get to boiling then follow hop schedule. At 10 minutes left in the boil, add the cold steeped wort to sanitize.
Chill wort to 66 degrees
Top off with bottled Spring water to get you to 5.25-5.5 gallons in fermenter and make sure wort’s agitated.
Pitch Imperial L17 yeast and try to keep temp between 60 and 66 degrees. Yes it’s a Lager yeast but I’ve heard from a lot of resources that this yeast does really well at low to mid 60 degree fermentation temperature. |

1. Boil 2.75 gallons of water
2. Steep crushed grains for 20 minutes or until temperature reaches 170 degrees F
3. Bring to a boil and add 6 lbs of malt syrup and 2 lbs of dry malt extract. Remove the kettle from the burner while adding to avoid burning.
4. Return the wort to a boil.
5. Add 2 Oz Centennial hops 60 mins before end of boil
6. Add 2 Oz Cascade hops 20 mins before end of boil
7. Add 1 Oz Centennial hops 5 mins before end of boil
8. Cool the wort
9. Add cooled wort to fermenter and top off to 5 gallons to achieve a temperature of between 75 and 78 degrees F.
10. Aerate the wort and sprinkle dry yeast onto the top of the wort.
11. Seal fermenter and let ferment for 1-2 weeks
12. After 1-2 weeks of primary fermentation, transfer beer to a secondary fermenter
13. 1 week from when you plan to bottle, add 2 Oz of Citra leaf hops and 1 Oz of Citra pellet hops inside muslin bags and into the fermenter.
14. Two days before you plan to bottle, add 1 Oz of Citra leaf hops inside a muslin bag and into the fermenter.

16. Let beer condition in bottles for 5-10 days before drinking.
