What's your next brew

Feel better @Zambezi Special!! Hope you kick your eye bug in the butt!

I keep going back and forth about what to brew with the Oyster Stout. Right now I'm leaning towards a light beer; 75%/25% 2 Row and Munich 6L, bit of Calypso hops to 25 IBUs, California lager yeast so it'll ferment at the same temps as the stout. Maybe call it Paddy's Punch :) I'll make the ABV higher than the stout for making Black and Tans

On Sunday, I'm going to brew an Oatmeal Stout based on Yooper's world-famous recipe. (Well maybe not world famous, but famous in the home-brewing world!) :)

@Yooper...any tips, suggestions, warnings or general admonishments?
I think the biggest change I made to your recipe is to add some Willamette late instead of all at 60. And I didn't use any 425L Chocolate, rather all Pale Chocolate.
I was also considering adding a bit of vanilla at packaging because I love how vanilla enhances the chocolate flavors, but maybe I should play it straight on my first pass.
 
I've heard Notty is good for pseudo lagers because it's so clean...kinda surprised you're using it in another estery ale after your experience with the mild?
Well beggars can't be choosers sunfire ;).

And I want to brew Tomorrow we're having absolutely crazy rainy weather so yeah I'm not going anywhere I'll be err brewing in place as well as sheltering drinking ect ect.

Pale ale can be clean no Aussie Sparking ale can be if so a little fruity estery ah well you won't have to drink it I'll have it all to myself:).

I've herd so much good things about Nottingham ale yeast I've used it once in JAs Irish Red it was great Mt dark mild well I've yet to taste a fully carbed version of it so I'll hang in and give it a good go before I stop brewing with it;).

Oh i do have framgarden kviek Belgian saison 1 or 34/70 to choose from too

Haha truly! Gotta get the job done with the resources you have sometimes. Bet it will be tasty!
 
My next batch will be Another Pilsner this time brewed without RO water. Same grist same yeast just different source water to see if I can taste a difference compared to the pilsner on tap ATM.

Will help to confirm my brewing process.:)
