What's your next brew

In a few weeks I’ll start brewing a run of English Bitters. I let brewing too often increase my drinking so I’ll be back on a schedule so that doesn’t happen this spring.

First up will be a Bitter I’m calling “Greenie” was listening to the brewer of Greene King, they make Old Speckled Hen, Greene king IPA and plenty of others. This Is close to the make up of Old Speckeld hen but it was his general recipe idea to start with for a basic bitter. 87% MO, 5% invert, 8% crystal. 30-34 ibu Challenger and ekg at 60 and a few IBU worth of Goldings with a few minutes to go. I may even keg hop. Imperial Pub yeast (He also said 92/8 MO/crystal was good to. But I usually don’t get anyway so trying invert)

second up will be my Manchester Gold based on one of the many Boddingtons recipes online. It will be hopped differently using Northdown and fuggles in addition to ekg. London III yeast. Only 3-4% crystal in this one and some wheat at 5%.

I’ll probably save slurry and get 2 brews from each yeast. So a golden ale and my London bitter based on fuller sis also on the docket

Old Speckled Hen is great! Josh, can you post the url to what you were listening to? I'd love to listen to him. Let us know how that recipe turns out...not that I expect anything other than great. I think I'll put that on the brew list for this year.

I had a go at "modifying" another OSH recipe on here to try and make it a Crafty hen... Still to brew it and I have had the Oak Chips in my box for two years just waiting for the right moment....

@AHarper So In your recipe you discussed Greene Kings water profile. Same for their other ales? The brewers didn’t mention water I just guessed.

I had forgotten about that. I think it may have been part of the original recipe I cloned. I'll take a look but it probably makes sense. I really lobe the OSH and OCH - the only problem about buying them is they come in clear bottles and I have too many of them already lol. I will still drink them though...

I can find pint cans and bottles if I’m in the right store.

Your answer is probably in the title...."Secrets of Master Brewers" :p

Actually, as Don mentions a small portion would be considered Fair Use. There is a formula to determine what that threshold is. But I can't imagine you'd be anywhere that limit.

I’ll be In Louisville end of April for a few days. I’m hoping to find a good store with some imports so I can get some good stuff. Also going to try find the homebrew store I found last time I was there. Going to take a yeti cooler for beer and hopefully liquid yeast
 
I'm not sure yet...
I got more or less all ingredients for mentored, except for the temperature ;)
So I could make it with Voss Kveik, or I'll have to wait as we are going towards winter.
Alternatively I could brew a poo-tin beer, but also only with kveik at the mo.
Or I re-do my weevilly wheat beer with coriander and lime peel as it came out quite well (and I still have weevilly wheat :confused:)
