What's your next brew

Yooper has a famous Oatmeal Stout recipe that can be found with a quick Google search. As a matter of fact, I'm going to brew an Oatmeal Stout next, based mostly off of her recipe. Stout season!
I wouldn't call Yooper's a Dry Irish Stout however as the grain bill for the Oatmeal Stout is a bit more complex. I think a nice Irish Stout can be accomplished with 70% 2-Row, 20% Flaked Barley, 10% Roasted Barley, EKG, and a clean, solid-attenuating yeast. YMMV.
That’s what I do. Been happy so far

My next brew on Friday is my attempt at a McEwan's Champion Clone. I like them strong so I tweaked it up a bit.

Nice. What's a little bit more than wee? Just a 'heavy'?

Is the smoked wheat a thing for McEwan's or just leftovers from the Piwo Grodziskie?

I don't have access to their original recipe so I looked about and saw one that mentioned a small amount of Peat smoked wheat - which I don't have but, yes you are right. I do have a very mall amount of smoked wheat from the Piwo so...
I don't think it will add too much smokiness but we shall have to see.
I had a Trappist beer that had a small amount of smokiness and it wasn't too bad so it may just add a slight "edge" to the brew. It may be so strong that it isn't noticed at all... who knows? Time will tell.

So I brewed the Irish Stout yesterday and upped my percentage of flaked barley to almost 27%
And... Stuck my mash!
Other than a 10 minute delay, everything else went well.
Ended up 3 points high on OG.
OG 1.047 target @ 77% eff. Is 1.044
IBU 35
Pitched @64°

What's the reason for increasing the adjunct so much?

Yesterday I worked up a recipe for my first Belgian Pale Ale to make use of the WLP550 that I have on hand from my Dubbel Switch. Luckily lhbs Windsor carries Belgian Pilsner and Biscuit malts. I just need to figure out what hops to use - Continental varieties (which I don’t have), or American varieties, which I have plenty. Looks like Monday will be brew day.

2 reasons actually...
I like it, and in larger amounts, it leaves a nice creaminess that goes well with that style especially when on Nitro or even just through a stout faucet.

Cascade will work

When I went to Scotland in 2015, I was still a deprived and depraved BMC kinda guy, so didn't try a lot of different things. But I found I really enjoyed a Tennents with my evening meal. But, since then I've been brewing myself and cultivated a taste for different ales, and certainly enjoy the adventures, I'll even go so far to say as my trips to Scotland and Ireland inspired me to broaden my horizons in my beer preferences. I'm now at the point I drink BMC if there's nothing else to drink, including water. Just kidding of course as good ol' Miller is my go-to if I don't have something ready to drink. When in Ireland in 2016, I did my absolute best, but just couldn't quite get a full pint of Guiness knocked back at the brewery in Dublin. It was still a most enjoyable experience, though. I developed a penchant for Hop House 13 made by Guinness, but apparently, that's no longer an option in Ireland. Seems it's been discontinued.

I have Cascade. Today I decided to postpone brewing for a week. Good thing, as I don’t yet have a hops choice or a schedule. It could probably work with Magnum for bittering, then Cascade for flavor and aroma. We’ll see.
found a good deal with my hop company, now I have too many, 20 or so pounds on my freezer

I'm looking at doing a "no longer really mentored". Grains are roasted, but I need to wait till I can see properly again
And I want to do something with rice. Just for the heck of it
