Sorry for blurry quality photo this was the best shot though. My first experience of a Red Ale. Blind Side. The last of the selection I bought at Aldi a few months back. Head and mouthfeel both somewhere between very good and excellent. Great hop taste about right on the end of my tolerance level but noticeably different to any other hoppy beers I have tasted. Bright/sharp. Problem is there is no other taste I can detect in there which is what lets it down unless of course that is how a red ale is supposed to be. I will look out for a different can/bottle in there and try it before considering brewing some, they stopped selling this just after I bought mine.

Funny thing I remember years ago buying this hop from the HB store before it was all the rage:).

I like galaxy, especially coupled with Citra or Mosaic. Tweaks the citrus flavors from those two very well. Not stupid bitter like Warrior (a little dab'll do ya). But Warrior is very efficient for getting bitterness up at a relatively low cost. It would probably make a pretty good 'ear wax' bitter on a short boil. Boiled too long, smells and tastes like ya emptied the lawn clippings in the pot. Very grassy.

Once we get our minds made up about the new digs (or not), I need to brew again. Think I'm gonna do a VERY simple base and start experimenting to find out which noble hops I like best. They all have their characteristics that make them work in different styles, but I want to try to isolate some flavors that I really like. IF we get the new digs, I'll have TONS of room to put in some bines and find something I like that will grow in the Alabama heat. Not like I wouldn't have water supply for dry weather.

I see many nice projects in the near future. Like a pump system for bine irrigation. Building out a brew room. Maybe even a little boat...

Anyhow, more North Georgia mead today, this one with raspberries, blueberries and blackberries. A little sweet but not overly so.

Am I tasting lemon? For sure. There’s a lemon/acid/citrus thing going on in the background BEHIND the pepper/clove from the yeast. Whether the lemon notes are coming from the cut up lemons that were added to the mash or it’s another contribution from the yeast, I can’t really say. Maybe both? Regardless, I’m really enjoying this beer.

From lunchtime: my 6 month old Pride of London Porter, ABV 5.5%. Very dark in colour even for a porter. Light to moderate consistent head with excellent carbonation. Also light to moderate taste on the coffee, dark chocolate, hops and overall bitterness - basically a good balance. Not very dry at all. Almost a commercial feel to it. Prefer it slightly creamier so will have to go over my notes for this batch. Has probably peaked in the bottle but did a couple of (mini) kegs for the first time so will be interesting how favourably the draught compares.

Almost a year old Oaked Apple Cider, Medium Dry, ABV: 7.5%. Whole batch has been undercarbonated so far although none has been flat yet either (reviewed my priming via the onsite advice since this so hopefully shouldn't happen again). Nice full flavoured, prominent apple, light on the oak, smooth mouthfeel, slow drinking strong cider going down great with English cheese. Weather has turned cool here last fortnight but this WILL be great over ice when it gets hot again.

Yes so I've seen and heard on the news.

I just fear it's gunna be the same down here we're already getting grass fires and it's still winter....

Let's hope not touch wood.

Edit apparently our fire-fighters are comming back early from over there to prepare for our bushfire season:eek:

Last bottle of the batch, Smooth Stout. I should have taken the picture right after pouring, when the chocolate milk colored foam filled the glass to the rim with the finest, tiny bubbles. Since Autumn appears to be making an early appearance here in the PNW, this beer just seems right.

Great presentation!
I think I’m getting some lemon flavor in my Saison fermented with the same yeast. Mine seems to be both tart and sweet, maybe somewhat complex, with a hint of spice on the finish. This style of beer is new to me, but I think I like it. There is still half a case left, and I have grains, hops and yeast slurry ready to brew again. I might get to that in the next few days.

My American Wheat, dry hopped with Mandarina Bavaria. During fermentation, outside temperatures were at or near 100F for a whole week, and inside the fermentation closet ambient temps approached 80F. This beer has a subtle fruit and spice character. A slurry of US-05 did the fermentation work. Although not what I intended, it is beer and it is imminently drinkable.
