Clove in a Hefe is very subtle. And it's not exactly clove (at least to my palate) but quite similar. You should also be getting a little yeastiness in there, often called bready. Oh, and Hefe is often at around 4 vols, so very fizzy for a beer.I like it. Bananas on the nose, spicy phenols on the taste. I’m not sure I can identify it as clove (as it’s supposed to be), but spicy nonetheless. A style worth looking into.
Yup dropping it won't help clarity I find beers with it are brite for me.I don't think it would really hurt anything, the Midnight Wheat is pretty low key in the flavor profile anyway. I say go for it!

If you brew this, try to find "stronger" bottles, as standard ale bottles can break from the pressure. Ideal would be European Hefe bottles.

Been a while. Love hat place. I like their burgers, flatbreads, and of course beer. Oasis was one I remember. THe Red and Piranha were great too.View attachment 20255 Back at BJ’s, drinking Piranha Pale Ale. My first beer was a Harvest Hefeweizen. Just for research, you know.
